Caramel Peanut Butter Chocolate Chip Cookies

Instructions

  1. Preheat oven to 350*F
  2. Prepare a cookie sheet with parchment paper, non-stick foil, baking mat or spray with cooking spray.
  3. Cream butter, brown sugar and 1 cup white sugar together.
  4. Add eggs and vanilla extract and blend well, scraping sides of bowl as needed.
  5. Add peanut butter and blend again. Scrape sides.
  6. Add flour 1 cup at a time, mixing between each addition.
  7. Add baking soda, salt, chocolate chips and caramel bits - blend.
  8. In a small bowl add 1/4 cup of sugar.
  9. Scoop out 1 Tablespoon portions of dough and roll into a ball.
  10. Roll cookig ball in sugar.
  11. Place cookie balls onto the prepared cookie sheet.
  12. Fill the entire sheet, leaving enough space between so cookies can expand.
  13. Bake for 8-10 minutes, remove when edges have a hint of golden.
  14. Let cool on the pan for 5 minutes, then transfer to a cooling rack.
