  1. Crust: Place vanilla wafers in an even layer in a square pan.

  3. Add: Pour half the mixture over the vanilla wafers in the dish.

Instructions

  1. Cover bottom of an 8x8 casserole dish with vanilla wafers.
  2. In a small heat proof bowl, combine jello, boiling water and lemon juice, stir to dissolve.
  3. Once dissolved, add ice cubes and mix until ice cubes are dissolved.
  4. In a separate bowl, beat cream cheese, sugar and lemon zest.
  5. Gradually add jello mixture to cream cheese mixture - whisking as you incorporate.
  6. Whisk in 2 cups of cool whip.
  7. Pour half of jello cream cheese mixture over the vanilla wafers.
  8. Cover with more wafers.
  9. Heat 1/3 cup of raspberry preserves in the microwave for 30 seconds.
  10. Brush over the tops of the vanilla wafers with a pastry brush or back of a spoon.
  11. Pour the remaining jello mixture over the top of preserves.
  12. Stand wafers around the edge of the dish.
  13. Chill over night.
  14. Prior to serving, top with remaining cool whip and fresh fruit. We prefer Raspberries, Blueberries and Kiwi!
