What Ingredients are in Banana Blueberry Bread?

You’ll need both pantry ingredients and fridge ingredients to create this delicious bread.

  • Butter: Room temperature is best. You can use unsalted butter or salted butter.
  • Sugar: The sugar will sweeten the bread. We use white, though you could use brown sugar if you’d like.
  • Bananas: Use the ripe bananas. The ones that are brown and spotty are perfect.
  • Eggs: The eggs help your bread to rise and hold it all together.
  • Salt: Don’t skip the salt as it brings out the flavors of the rest.
  • Baking Soda: The baking soda will cause the bread to rise.
  • Bread Flour: The flour gives the banana and blueberry bread its shape and texture.
  • Blueberries: Use between 6-8 ounces, depending on how much blueberry you want.

Pro Tips:

  • Use mashed bananas. You can easily squish them up.
  • Mix things up with chocolate chips or lemon zest instead of the for a unique flavor.

  1. Cream your ingredients: Be sure to thoroughly cream your ingredients together.
  2. Add Dry Ingredients: Mix the dry ingredients into your batter.
  3. Add Blueberries: The best part! Be careful not to squish them! We like to toss them with a little flour to prevent sticking
  4. Bake: To ensure the bread is baked all the way through, stick a toothpick in the middle and see if it comes out clean again.

Pro Tips:

  • Grease the loaf pan before beginning the recipe or use parchment paper.
  • I don’t have trouble with the juicy blueberries sinking to the bottom but if you do, coat them in a little flour before adding them.
  • Use a separate bowl to combine ingredients.
  • In a hot oven, the banana bread with blueberries has a long bake time. So go relax for a while!
  • Use a wire rack to cool the bread. It’ll help keep excess moisture out.

Can I Add Frozen Blueberries to Banana Bread?

You absolutely can add frozen blueberries to banana bread!

Don’t thaw the frozen blueberries first, but just add them to the recipe the same as fresh plump blueberries.

It is important to note that a frozen blueberry will bleed more than a fresh blueberry.

So you’re more likely to have the entire loaf turn purple, instead of just the blueberries being purple.

If the color doesn’t bother you, just toss those frozen blueberries in and enjoy this loaf all year round.

How to Store this Blueberry Banana Bread Recipe?

Keep any leftover blueberry banana bread in an airtight container or bag. 

You can store it either on the fridge or on the counter. The fridge will keep bacteria from growing for a longer time.

If you’re eating it within a few days, that shouldn’t matter.

Be sure to let the easy banana bread recipe cool completely before storing.

Can You Freeze Banana Blueberry Bread?

Yes you can freeze blueberry banana bread!

Because this makes two loaves of bread, we frequently leave one out to eat and freeze the second loaf for later.

First, allow the bread to cool to room temperature. This keeps any extra moisture from developing in your freezer safe bag.

Then wrap the loaf tightly in aluminum foil. 

Finally, toss the entire wrapped loaf into an air-tight container.

When you’re ready to eat, allow the loaf to thaw on the counter overnight.

You can also wrap individual slices in plastic wrap and freeze.

Then toss in the microwave for 20-30 seconds before enjoying!

How Long Does Banana Blueberry Bread Last?

How long banana blueberry bread lasts depends on where you store it.

  • Counter: Up to three days.
  • Fridge: Up to seven days.
  • Freezer: Up to two months.

How Ripe Should Bananas Be For Banana Blueberry Bread?

You want your bananas to be over ripe for banana bread. That means they are ugly brown bananas.

Green bananas have less sugar in them, making them less sweet.

As the banana ripens, it gains more sugar. And as it turns brown and spotty, even more sugar is added!

You don’t want the bananas to be completely brown and full of liquid that smells like alcohol.

Your bananas are fermenting at that point and they’ve gone too far.

But they should be extra soft and covered almost completely in brown spots.

Can Dogs Have Banana Bread?

Delicious banana bread is usually best left for the humans in your life.

Most of the time, wheat is just food for a dog. Not really good or bad.

Though some dogs can have allergies so you’ll want to watch out for that.

But sugar can be hard on their systems, and is best avoided.

Dogs can however eat plain bananas, so go ahead and share some plain bananas while baking.

How to Know if Banana Bread is Done?

Even good banana bread is notorious for being undercooked in the middle of the bread.

That’s because it takes a long time to fully bake those bananas!

Add in all the blueberries and you really want to make sure your bread is moist and not just undercooked.

So, let your bread cook completely.

Then, when you think it’s done, stick a toothpick, or long thin knife into the center of the loaf.

If it comes out clean, your bread is done!

If it comes out with crumbs or wet batter clinging to the sides, cook longer.

The bread should also be a brown color on the outside.

Can I Give My Baby Banana Blueberry Bread?

A lot of that depends on the age of your baby!

If your baby has tried all of the ingredients of this easy recipe on their own, and reacted well, then it should be okay.

But you want to make sure your baby has no allergies, so don’t start with banana blueberry bread as a first food.

Also, babies tend to not care about the sweetness as much as adults, so consider reducing the amount of sugar.

It’s better for them not to get hooked on that sweet stuff too early! They’ve got their whole lives for that.

Blueberry Banana Bread

This easy Banana Blueberry Bread is the perfect snack! It’s moist, delicious, and when fresh out of the oven is a bread everyone goes crazy for.

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 1/2 cup butter, room temperature - we use salted
  • 1/2 cup white sugar
  • 1/2 cup mashed bananas (about 2 medium bananas)
  • 2 eggs
  • 1/8 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups bread flour + 1 Tablespoon (divided)
  • 4 -6 ounces ounces of blueberries, fresh or frozen (not thawed), depending on how blueberry you want your muffins.

Instructions

  1. Preheat oven to 325*F
  2. Butter one 9" loaf pan
  3. Cream together the butter, sugar and ripe bananas. Mix well.
  4. Add eggs and blend well.
  5. Add salt, baking soda and 2 cups of bread flour. Mix well.
  6. In a small bowl combine blueberries with 1 Tablespoon of bread flour. Toss gently.
  7. Add coated blueberries to bread mixture. Gently mix.
  8. Pour batter into bread pan and toss a few extra blueberries on top for decoration if desired.
  9. Bake for 45 minutes - or until a toothpick can be inserted and removed from center of bread and come out clean.
  10. Let cool for 5 minutes in bread pan, before removing from pan and letting cool on a cooling rack.
  11. Slice and serve with butter!

Notes

Any fruit can be substituted for the blueberries.

If top begins to brown too quickly, tent with tinfoil and allow to finish baking.

I made this recipe and was a little apprehensive as the description says it makes 2 loaves but the baking instructions are for 1 loaf. Also the recipe called for 2 eggs yet the directions do not include them in the mixing of the very thick batter. Just wondering if there is an ingredient missing or if the liquid measure should be more than half a cup? I am just waiting for the bread to finish baking, then I will write a review on the bread itself. Thanks for sharing this recipe!
