- 2 Tablespoons olive oil
- 2 pounds stew meat, trimmed and cut into 1/2 inch - 1 inch pieces
- 1 cup yellow onion, diced
- 1 red bell pepper, diced
- 1 Tablespoon garlic, minced (2-3 cloves)
- 2 large carrots, cut into 1/4 inch coins
- 1/2 cup tomato sauce
- 1 1/2 cups beef broth
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 bay leaf
- 2 teaspoons salt
- 1 1/2 cups Jasmine rice
Instructions
- Turn sauté function on instant pot.
- When the instant pot says hot, add olive oil and then stew meat.
- Cook for 3 minutes giving a quick sear to all sides of the beef.
- Remove beef and set aside.
- Add onion, bell pepper and garlic. Sauté for 2 minutes.
- Add beef back into the onion mixture.
- Add carrots, tomato sauce, and beef broth. Mix well.
- Add black pepper, garlic powder, paprika, bay leaf and salt. Mix well.
- Hit cancel to turn off sauté function.
- Place the lid on the instant pot, and flip the steam valve to close.
- Cook on high pressure for 10 minutes. Instant pot will take 7-8 minutes to come to pressure, then start the 10 minute timer.
- Once the timer goes off, flip the switch and allow steam to escape from the instant pot.
- Once the pressure valve drops, open the instant pot and add rice. Do not mix.
- Place the lid back onto the instant pot and cook for 15 minutes. Instant pot will take 7-8 minutes to come to pressure, then start the 15 minute timer.
- Once timer goes off, let instant pot naturally release for 15 minutes.
- After 15 minutes, flip the steam valve to open and let the pressure valve drop.
- Open the lid and stir. Serve immediately.
