A Great Leftover Thanksgiving Recipe!

When it comes to re purposing Holiday leftovers, Num’s the Word is definitely your go to website.  From my Peppermint Patty Recipe to Stuffed Burgers and Ham Biscuits, we’ve got you covered!

This baked brie in puff pastry is a favorite way to use up leftover cranberry sauce!  This recipe works best with a thicker cranberry relish or sauce.  Anything too liquid will just run and keep your puff pastry from getting a nice flaky crust.

So if you’ve ever wondered what to do with your leftover cranberry sauce, then I recommend making this Cranberry Baked Brie as a crowd pleasing ‘WOW’ appetizer!

Do You Cut the Rind off Brie Before Baking?

This is the most common question asked when it comes to brie.  And to be honest it was the first question I asked my first time cooking with it.

The white rind on brie IS edible.  Its a particular type of mold that is placed all around the cheese to help preserve it.  It’s not harmful and has a flavor all its own.  However some people don’t care for it and choose to remove the rind in some recipes.  For this recipe however, it’s best if you leave it on to help with the baking process.  Once the cheese is gooey, scoop out the cheese and leave the rind behind.

What can you top your brie with?

For this recipe we use a flavor packed Cranberry Orange Relish.  However you could always go simple with a drizzle of honey or maple syrup, pecans or a yummy jam.  The options are endless.  However today, we’ll be focusing on the flavors of orange, cranberry and brie!

What Ingredients Do you Need for Cranberry Baked Brie?

  • Cranberry Orange Relish It only takes 10 minutes to whip up and will turn your brie from ordinary to extraordinary!
  • Puff Pastry Sheet – A pretty important ingredient in Cranberry Baked Brie in Puff Pastry!  Each package comes with two sheets. You’ll only need one for this recipe.
  • Egg – After assembling, we’ll do an egg wash on the outside of the puff pastry to give it a lovely shiny coat and color.
  • Crackers – A good solid, non crumbly cracker is best.  We prefer these water crackers, but any solid cracker will do.
  • Fruit – not only do fruit and cheese look great together but you can also scoop up a gooey glob of cheese with an apple slice or even a grape!

What Size of Brie is Best to Use?

When it comes to buying your brie, I recommend buying a reasonably priced one.  We like to get ours from Sam’s Club or Costco.  Because you’re not serving the brie as is, but adding a cranberry relish on top, you’re average priced brie will taste just as good as an expensive one!

In terms of sizes, that will depend on how many guests you have and what other appetizers you’ll be serving.  I suggest going with an 8 – 14 ounce brie. If you have a large party you could do multiple baked bries in puff pastry, baking one after the other for an always fresh hot brie for your guests.  Or various flavors of baked brie.

How do you keep baked brie warm?

Once baked, Baked Brie in Puff Pastry will keep warm and gooey for about 15 minutes.  Because of this, you’ll want to bake it and serve immediately.  After that you’ll have to reheat it.

I recommend nuking it in the microwave for 1 or 2 minutes  and it’s ready to go for another 10 – 15 minutes of deliciousness!  If you have an aversion to microwaves, you can always toss it back into the oven.  I would tent it with foil first to prevent the puff pastry from burning when baking a second time.

What do you serve with baked brie?

Depending on the type of party you’re hosting, there are a variety of great party appetizers that would go great with brie.

Instructions

  1. Thaw puff pastry sheet for 15 minutes before using.
  2. While puff pastry sheet is thawing, make the orange cranberry relish.
  3. Preheat oven to 350*F
  4. When puff pastry is thawed, roll out to a size that will easily wrap your entire brie.
  5. If you do not plan on eating the rind, slice brie in half like a sandwich to create two perfect circles.
  6. Place one half of brie on puff pastry sheet with the exposed side up.
  7. Scoop 1/2 - 1 cup of cranberry relish on top of open brie.
  8. Place second half of brie on top of relish, cheese side down.
  9. If you plan on eating the rind, scoop 1/2 to 1 cup of cranberry relish in the middle of puff pastry - do not spread. Place uncut brie on top of relish.
  10. In a small bowl beat egg and 1 Tablespoon of water.
  11. Wrap brie up in puff pastry and brush with egg wash every place the puff pastry will touch itself.
  12. Place brie on parchment paper and then on a cookie sheet. This will help with transferring your cooked brie to a serving dish after baking.
  13. If you have any extra puff pastry, cut out festive shapes to decorate the top of your brie.
  14. "Glue" the shapes onto the pastry with egg wash.
  15. Now brush top and sides of puff pastry with egg wash ensuring it's all covered. This will help give it a nice golden glossy look.
  16. Bake brie for 15 - 20 minutes or until brie is hot and golden.
  17. Serve immediately. Using a knife, cut a wedge out of brie and let the cheese flow!
  18. Serve with firm crackers and fruit.
