This Crock Pot Chili Cheese Dip is easy and versatile! Made with ground beef and either a cheese sauce or Velveeta. Perfect as a chip dip, or used for Chili Cheese Fries, Chili Cheese Dog or Chili Cheese Nachos.

Have you ever been tempted to buy one of those giant tubs of cheese dip at a club store?  I have. 

On more than one occasion I’ve been tempted to buy one of their giant cans of cheese dip and just dig in.

The problem though is that no one person can eat an entire can of cheese dip.

My main temptation when purchasing a giant can of cheese dip is that it is SO CHEAP compared to Velveeta or other cheeses.

As you’ve probably guessed, one day my temptation won and I did purchase the giant can of cheese dip.  Let’s just blame it on hormones and not having eaten dinner yet.  

When I brought the can into the house, my husband couldn’t believe I actually went through with it.

His first question was, well what are you going to do with it? 

No clue.

Aside from enjoying it with tortilla chips as a dip, I had no idea what on earth I was going to do with 128 ounces of cheese sauce.  

Good gravy what was I thinking?  We weren’t hosting any parties and we certainly couldn’t eat it fast enough.  

And so I’ve resolved to find creative ways to turn my cheese dip into other tasty recipes.

One being this Crock Pot Chili and Cheese Dip.

As you’ll see from the photographs I doubled this recipe.  

I did this for two reasons.  1) So that I could share this with the teachers at my daughters school. 2) So I could find other creative uses for this cheese dip.  

I hate having leftovers and when I do, I like to re-purpose them into other tasty recipe.  

This Velveeta Chili Cheese Dip will be easy to transform into other ways of eating than just a simple chip dip.

The hard part is trying to figure out what I’m going to do with 1/3 can of cheese dip that is sitting in my fridge. 

Don’t you worry, I’m sure I’ll whip it into another tasty dip that will be just in time for the big game!  

When it comes to a good party, the venue isn’t the most important aspect.  The food is.

Everyone knows if you want to have a great party you need to have a great snack bar.

This Chili Cheese Dip makes for fantastic snack bar or game day food.  The main reason for this is because it’s a crock pot dip.  

I love how you can prep this in advance and then pop it in the slow cooker and keep it on warm as you and your guests enjoy how tasty it is.

The other aspect that I love about this dip is that your guests will probably add it to their other dishes as well, making it a well rounded, versatile dip.

CAN I USE VELVEETA CHEESE INSTEAD OF CHEESE DIP?

Yes you can use Velveeta cheese instead of cheese dip.  The cheese dip is already creamy and smooth, whereas the Velveeta cheese is a soft solid.  However Velveeta does melt quickly so you can use it in place of the cheese dip.  Keep an eye on the cheese and mix it well to ensure that it melts evenly.

WHAT ELSE CAN I USE THIS CHILI CHEESE DIP ON?

We have found that this Slow Cooker Chili Cheese Dip works great on a variety of foods.

Imagine a hot baked potato.  Now top it with this Chili Cheese Dip and suddenly you have a Chili Cheese Baked Potato. How about crispy french fries?  Spread this on top of a plate of fries and you’ve got Chili Cheese Fries.

I had one friend who spread hers on top of breakfast hash browns.  Other ideas are hot dogs, making chili cheese dogs as well as a topping on a burrito and hamburger. 

Lastly how about switching up your traditional macaroni & cheese for Chili Cheese Mac n’ Cheese.  Just cook up some pasta noodles and use this sauce on top!

This Crock Pot Velveeta Cheese Dip is really quite versatile, making leftovers a breeze to use up!

CAN THIS DIP BE MADE OUTSIDE THE CROCK POT?

Yes it can!  You can make this on the stove or even in the microwave. 

Stove Method: Cook the ground beef and onions as directed but in a large pot.  Then add all other ingredients and cook over medium low heat until cheese is melted and mixture is hot. Serve warm.  If dip starts to thicken too much as it cools, warm it up again.

Microwave Method:  Cook ground beef and onions as directed.  In a large microwave safe bowl add cooked ground beef and onions as well as all other ingredients. Mix well.  Cook in one minute increments until mixture is cooked all the way through, creamy and hot. 

Oven Method:  Cook ground beef and onions as directed.  Once cooked, pour ground beef along with all other ingredients into a 9×13 casserole dish (or larger).  Cook Chili Cheese Dip in the oven at 300*F for 1 hour, mixing every 20 minutes.  Cook longer if needed, until mixture is smooth, creamy and cooked through.

This Crock Pot Chili Cheese Dip is easy and versatile! Made with ground beef and Velveeta. Perfect for hot dogs & baked potatoes & chips.

Cook Time 2 hours
Total Time 2 hours 30 minutes

Ingredients

  • 1 pound lean ground beef
  • 1 small white onion, diced
  • 2 teaspoons chili powder
  • 1 (16 ounce) can chili beans
  • 1 (10 ounce) can Ro*tel tomatoes
  • 32 ounces cheese dip or Velveeta cheese cubes cut up
  • Tortilla Chips
  • Pretzels

Instructions

  1. Cook ground beef and onion over medium heat until ground beef is cooked through. If there is a lot of grease, drain ground beef now.
  2. Add chili powder to ground beef and mix well.
  3. In crock pot add chili beans and Ro*tel tomatoes. Do not drain cans.
  4. Add ground beef mixture to beans. Mix well.
  5. Add cheese and mix well.
  6. Cook on high for 1 - 2 hours, mixing well every 30 minutes. Once mixture is hot and creamy then it's ready!
  7. Once ready enjoy with tortilla chips or chips.
