When it comes to party dips, this Crock Pot Mexican Sausage Dip is quickly becoming a favorite of ours!

Party dips go in phases in our home.  They certainly aren’t a daily thing, but we always look forward to when we have enough people coming over to whip one up!

Game Nights with friends, watching the big game on T.V. or hosting a party are all reasons that we like to whip up this Slow Cooker Mexican Sausage Dip.

I’ve been thinking about this dip for quite some time.  That’s generally how a recipe starts.  I start with an idea, toss it around for a while in my head, talk it out with my husband and then finally make it.

The making it part may sound easy but most recipes take several tries of testing before I get the temperature, length of time and ingredients just how I think they taste best. Coming up with the best flavor combination for this Crock Pot Mexican Sausage Dip has been difficult.

At first I was trying to do a traditional dip – Velveeta, Ro*tel and Sausage. As good as that is, it just wasn’t quite the flavor I was looking for.  It tasted good but the flavor was lacking.

Then I decided to skip the sausage, and do a Velveeta, ground beef, Ro*tel & cream cheese mixture. Again, delicious but not quite what I was aiming for.

Finally I decided that instead of trying to find the best combination of ingredients, why not toss everything into my crock pot and see what happens.

So in went all my favorite dip ingredients with the addition of taco seasoning.

Once I tried it, that’s when I knew I had the winning combination. I love how hearty this Crock Pot Mexican Sausage Dip is.  You’ve got two pounds of meat mixed with with a yummy, creamy, cheesy sauce.

Add in a little taco seasoning (homemade or store bought) and we’ve just kicked this dip up from delicious to outstanding!

The feedback I got with this combination of ingredients is that it was delicious and definitely a winning recipe. However, several people said they loved the dip, but wished it had more of a kick to it, as they prefer things a bit spicier.

Don’t worry. Not everyone likes a kick.  but if you do it’s not a difficult fix!

This dip is easy to adjust to your specific heat scale.  You can add in a spicy sausage as well as, or, up the heat in your Ro*tel.  My kids think Original is spicy so we usually go with mild.  However if you like a kick, then that’s an easy fix.

The other way you can add a little kick to this Cheesy Sausage Dip is to toss in a few diced Jalapenos!  The seeds are what make a Jalapeno spicy so add as many or as few seeds as you like!  The Jalapenos will also add some great flavor!

If you don’t have a crock pot or it’s busy with another item, you can certainly make this on the stove!

However you’ll want to keep it on low as you eat it.

As with all things with Velveeta, as soon as it gets cold, it gets pretty thick.

This is definitely a dip you want to enjoy warm!

However if this Cheesy Mexican Sausage Dip does get cold, or you save the leftovers for another night, then just pop it in the microwave or back in the crock pot to warm.

It will melt right back into a beautiful dip that you and your guests will love.

One of the biggest surprises for me was that my kids loved it.  My kids are not dip fans.  They generally refuse  is that my very picky eaters surprised me with how much they liked this Sausage Cream Cheese Dip.  What little bit we had left the kids devoured as an after school snack. 

If you have a gathering coming up and need a tasty dip, whip this one up.

It’s hearty enough to fill a hungry belly and yet light enough to not make you feel bloated!

Crock Pot Mexican Sausage Dip

Hearty Crock Pot Mexican Sausage Dip! This party dip is perfect for the Super Bowl, baby showers & game nights! Packed with all your favorite flavors it's a winner at any event!

Cook Time 2 hours
Total Time 2 hours 15 minutes

Ingredients

  • 1 pound ground regular breakfast sausage (If you want a spicy dip, use spicy sausage)
  • 1 pound ground beef
  • 16 ounces Velveeta cheese
  • 2 (8 ounce) packages cream cheese
  • 2 (10 ounce) cans Mild Ro*Tel tomatoes (If you want a spicy dip, use Original or Hot)
  • 1 package taco seasoning (or 2 Tablespoons homemade)

Instructions

  1. In a skillet over medium heat, cook ground sausage and ground beef until no longer pink.
  2. Drain off excess fat and transfer mixture to crock pot.
  3. Cut Velveeta and cream cheese into chunks and place into crock pot on top of meat.
  4. Pour in diced tomatoes (with juices) and taco seasoning.
  5. Turn crock pot to low and cook for 1 hour.
  6. Stir well to incorporate all cheeses and seasonings.
  7. Cook for 30 more mintures or until cheese is melted and hot.
  8. Serve with your favorite tortilla or corn chips.

Notes

If you overcook this it will turn into a thick clump. To thin out, add another can or two of rotel tomatoes or milk slowly as you whisk.

This looks great! How much does it make? I am buying my wife a small 2 quart crock pot for Christmas that she wanted for dips like this. I want to make this recipe on Christmas day and was wondering if I should half the recipe since it's going into a small crock pot, and it will just be the two of us eating it so I am thinking half of the recipe would be enough for two? Thanks!

Roger, you've got the right idea. Simply half the recipe and it should work fine. You can also do it on the stove in a pinch too. What a lovely christmas gift! I hope she loves it!

When you say breakfast sausage, do you mean the seaoned kind? For example, Jimmy Dean. Or plain pork sausage. Could you please tell me the certain brand you use. I can't wait to make this for our camping group this weekend! Thank you!

Either Jimmy Dean or plain pork sausage will work. I get the tube, not the precut patties or links. Hopefully that helps!

I was looking for something a little more than just Rotel dip, and this was the bomb! Everyone loved it, I made mine with 2 lbs of mild breakfast sausage and spicy taco seasoning, which didn't make it too spicy just gave it some great flavor. Will definitely make again.

We reheat ours in the microwave. 30 seconds, stir, 30 seconds again, repeated until we get the right temperature for us. Or you can put it on the stove and over low heat warm it up.
