If you have a family like mine that is really picky about egg recipes, I have a confession. I make these because I love them. Even if no one else does.

Jalapeno deviled eggs with bacon are my most favorite appetizer dish ever. It is one of those great recipes I come to again and again.

I can (and do!) eat the whole batch myself. But even though my husband does not like hard boiled eggs, he will eat one or two of these deviled eggs with bacon and jalapeno.

I don’t know if it’s the crunch of the bacon or the flavor of the pepper, or maybe it’s just the extra time it takes to make something feel a little extra special, but this is the eggs recipe that keeps everyone happy.

What are jalapeno deviled eggs?

I like to imagine jalapeno deviled eggs as little egg boat bites of happiness, but that doesn’t describe them well.

A description of the classic version is a hard boiled egg, sliced in half, that has the yolk removed, mixed it with creamy ingredients and veggies, and put back on like an egg frosting but savory.

Why are they called deviled eggs?

The term “deviled eggs” came from way back in the day when deviled dishes were spicy dishes. The high heat flavor was associated with being of the devil.

Today they do not need to be spicy deviled eggs to have that label, they just need to be hard boiled, sliced in half, and filled with creamy yolk.

Pro Tip: If you do not like spicy food, just remove all the pepper seeds (while wearing gloves) and you will get flavor without spice.

If you love spice, then keep some seeds to give the jalapeno bacon deviled eggs a nice hint of spicy pepper flavor.

What ingredients are in jalapeno deviled eggs?

  • Hard-Boiled Eggs: peeled and sliced in half
  • Mayonnaise: this adds a rich creaminess to the eggs; be sure to use a brand you love the flavor of
  • White Vinegar: I prefer my mayonnaise dishes to be more vinegar based; I like the sweet acid kick mixed with the heavy cream of the mayo
  • Ground Mustard: this adds a hint of spice, but without extra liquid that can make the filling too runny
  • Powdered Sugar: you really want powdered so it blends into the filling and gives you a perfectly smooth and creamy base
  • Jalapeño Peppers: seeded and diced very tiny to make it flavorful, but not a spicy food
  • Bacon: you want it cooked crispy & crumbled; pre-cooked bacon works great in this dish
  • Paprika: this is optional, but in addition to a quiet smoky flavor, it adds great color specks to each of the bacon jalapeno deviled eggs

How to make jalapeno deviled eggs:

  1. Slice eggs in half and separate the egg whites shell from the yellow yolk.
  2. Mash egg yolks with mayo, vinegar, mustard, and sugar in a small bowl and blend until smooth.
  3. Add bacon and jalapeno, saving some for the top of the deviled egg.
  4. Use a rubber spatula to scrape the filling mixture into a Ziploc bag and cut a small hole in one corner of the bag.
  5. Squeeze egg yolk mixture filling into egg white halves and top with remaining bacon and fresh jalapenos.
  6. Serve or place eggs in the fridge to chill covered until serving.

How to boil eggs for jalapeno deviled eggs:

Everyone wants perfect hard boiled eggs, and I promise you everyone has their own best ways to boil them for these jalapeno deviled eggs or any other recipe using them.

Most of them agree that you need an ice bath when you pull them out of hot water to stop the eggs from overcooking.

I recommend Instant Pot Eggs.  

If you don’t have an instant pot, then you can make Easy to Peel Hard Boiled Eggs!

And lastly, you can always whip up Air Fryer Eggs.  Bet you didn’t know you could do that!

When to serve jalapeno deviled eggs:

You can serve jalapeno deviled eggs anytime, but here are some of my favorite times to serve them.

  • New Years Eve: these make a great party appetizer, and new years is a great time for an appetizer party
  • Potlucks: anytime you need to bring food to an event, these always disappear
  • Anytime: I eat these for lunch for myself or as a snack. They really are my new favorite grown up snack option.
  • As a Side Dish: these can stand alone, as a true appetizer, or just on the table with other dishes anytime

How long are jalapeno deviled eggs good for?

Jalapeno deviled eggs are best eaten the same day or within 2 hours of filling them

Pro Tip: Store them in an airtight container so they do not dry out before serving!

You can make hard boiled eggs up to a week in advance, and I have been known to make a batch of these deviled eggs with bacon and jalapeno to eat all by myself over the course of a week. But for the best results, you want to eat these filled eggs in one or two days.

Are jalapeno deviled eggs healthy?

Yes jalapeno deviled eggs are healthy. Eggs have so many nutrients including protein, vitamins, and minerals. On top of that, this recipe includes peppers to increase your vegetable intake and add even more nutrients.

These are a great choice to help fill you up with good nutrients when you are looking for foods to keep you healthy.

Are jalapeno deviled eggs keto?

Yes, these jalapeno deviled eggs are perfect additions to your keto diet. They are high in protein and fat and very low carb.

Note: My recipe does include mayo, white vinegar, and powdered sugar which do contain some carbs. If you are focused on your macronutrient ratios and always add a little extra sugar in each dish, you may want to check your keto plan to see how these fit into it.

Bacon Jalapeno Deviled Eggs

Ingredients

  • 12 large hard boiled eggs, pealed and sliced in half
  • 1 cup mayonnaise
  • 1 1/2 teaspoons white vinegar
  • 3/4 teaspoons ground mustard
  • 2 teaspoons powdered sugar
  • 2 Jalapenos, seeded and diced very tiny. (if you like kick, keep the seeds. I prefer flavor over heat)
  • 4 slices of bacon cooked crispy & crumbled (pre-cooked bacon works great),
  • 1/4 teaspoon paprika (optional)

Instructions

  1. Slice eggs in half lengthwise and pop out the yellow yolk.
  2. Place yellow yolk into a small mixing bowl and using a fork or pastry blender and mash.
  3. Add mayo, vinegar, mustard & powdered sugar and blend well using a hand mixer. Our goal is for SMOOTH filling.
  4. Add 3/4 of the bacon crumbles and 3/4 of the jalapeno and mix well.
  5. Place filling into a pastry bag or ziploc bac and snip the tip. Squeeze filling into all 24 egg halves.
  6. Top filled eggs with remaining bacon and jalapeno.
  7. Serve immediately or chill covered until ready to serve.
