Buffalo Chip Cookies is a recipe I’ve had up my sleeve for a while now. They’re easy, Ahh-mazing, and a break from the original chocolate chip cookie that everyone will love!

And the combo of cornflakes and pecans makes them crunchy and nutty in the very best way!

These cookies are super easy to make! So perfect for baking beginners or when you need a quick sweet treat.

Plus you can mix and match! Feel free to swap out nuts or chips to customize and find your favorite cookie!

What Ingredients Are in Buffalo Chip Cookies?

These old fashioned buffalo chip cookies are gonna need a large mixing bowl and a few ingredients! Here’s what you’ll need:

  • Butter: Room temperature for easy creaming.
  • White Sugar & Light Brown Sugar: For that perfect sweetness and chew.
  • Eggs: Binds everything together.
  • Vanilla Extract: Use pure teaspoon vanilla extract over imitation for better flavor.
  • Baking Powder & Baking Soda: For the perfect rise.
  • Salt: Just a pinch.
  • All Purpose Flour: I’ve only made this with white flour so don’t try subbing.
  • Rolled Oats: For a yummy chewy texture.
  • Semi-Sweet Chocolate Chips: Because chocolate is a must! White chocolate chips would be a fun swap if you want too!
  • Coconut: Adds a sweet, nutty flavor.
  • Pecans: Feel free to swap with other nuts if you want.
  • Cornflakes: The secret ingredient for that extra crunch!

Pro Tips: 

  • Chop pecans finely! No big nuts allowed!
  • Crush the corn flakes lightly before adding them to the mix. This will help it bake more evenly.
  • Use a kitchen scale or proper measuring cups for dry ingredients.
  • If your cup butter and eggs are at room temperature you’ll get a more even mix.

How to Make Buffalo Chip Cookies?

This is seriously the best cookie! You’re going to thank yourself for making them! 

You may even want to add the recipe to your own recipe box! Here’s how to make them:

  1. Cream butter and sugar. I prefer a stand mixer cause it’s less work.
  2. Add large eggs and vanilla.
  3. Combine flour and other dry ingredients in a separate bowl then add to the wet ingredients.
  4. Add the goodies! Chocolate! Crunch! Yum!
  5. Bake until the edges turn golden brown.
  6. Let them cool just a little before moving them to the wire rack and then munching down!

Pro Tips:

  • Line baking sheet with parchment paper for easier cleanup.
  • If your dough feels sticky, chill it in the refrigerator for 30 minutes.
  • Don’t skip letting them cool on the ungreased cookie sheet for those few minutes. It really does make a difference in the texture.
  • Don’t overmix to keep the cookies tender!
  • Don’t overcrowd the baking sheet. Use the cookie scoop to keep space between each drop dough ball.

I know 13 might seem like unnecessary ingredients, but I promise, none of them are!

Follow the exact recipe and you’ll love every bite!

If you don’t want to include everything or want to make some swaps, I recommend only changing out the mix-ins.

That means like the chocolate chips, coconut, pecans, or cornflakes.

Changing them will change the flavor and texture, but it won’t mess with the overall structure of the cookie.

What Is a Buffalo Chip?

A buffalo chip traditionally refers to…dried buffalo dung. I don’t even want to type that. Cause these cookies are SOO yummy.

But that is what they’re called! And it’s all because they have a kind of rustic, chunky look. 

Maybe similar to an actual buffalo chip in looks? I don’t think so but maybe some people think they look like that.

Either way, they’re such a sweet treat and I swear you won’t be thinking about buffalos and the prairie at all while you’re eating them!

Why Are These Called Buffalo Chip Cookies?

They’re called Buffalo Chip Cookies because they have a hearty, loaded kind of texture.

The kind that might remind you of the rough, rugged appearance of actual buffalo chips. 

But let’s stick to the tastier version, shall we?

Can I Use Other Nuts?

You can absolutely use other nuts! 

While pecans are my go-to for this recipe, feel free to swap them out with your favorite nuts. 

Walnuts or almonds would make great substitutes.

Or you can go with a nut-free version and simply omit them.

How to Store Buffalo Chip Cookies?

Store these cookies in an airtight container at room temperature. 

They’ll keep fresh and delicious for days, making them perfect for snacking anytime.

I don’t really recommend storing them in the fridge cause I don’t like them cold.

But you can also keep them in the fridge if you need them to last longer.

How Long Do Buffalo Chip Cookies Last?

When stored properly in airtight containers, this delicious sweet treat bakes up in no time and can last for up to a week!

They’re so delicious, though, I’d be surprised if they make it that long!

Really! They’re always gone within a day or two over here. Even if I double the batch!

Can You Freeze Buffalo Chip Cookies?

Yes, you can freeze Buffalo Chip Cookies! And it does make a lot of cookies, so if it’s just you, you might want to!

Once they’ve cooled completely, place them in a single layer on a baking sheet to freeze them individually. 

After a couple of hours, transfer the cookies to a freezer-safe bag or container. 

They’ll keep well for up to 3 months. 

Thaw at room temperature to eat. Or you can eat them cold too! 

I do sometimes like sneaking a frozen cookie straight from the freezer. Yum!

Can You Freeze Buffalo Chip Cookies Dough?

Freezing cookie dough is a great way to have fresh baked cookies anytime! And every time! Really! 

Who doesn’t need super quick cookies every now and then?

So just scoop the dough onto a baking sheet as if you were going to bake them. Then freeze until solid. 

Transfer the frozen dough balls to a freezer bag and keep them frozen for up to 3 months. 

Bake straight from the freezer, adding a few extra minutes to the baking time.

Just be sure to watch them! You don’t want them to burn!

Buffalo Chip Cookies

Buffalo Chip Cookies are an easy, delicious recipe that's perfect for sharing! Crunchy, chewy, and utterly irresistible! You won’t be able to stop eating them!

Instructions

  1. Preheat oven to 350*F
  2. Line two cookie sheets with parchment paper (yes!), non-stick foil or spray with cooking spray and set aside.
  3. In a large mixing bowl (bosch), add butter, white sugar and brown sugar and mix well.
  4. Add in eggs one at a time and mix well after each addition.
  5. Add in vanilla extract, baking powder, baking soda and salt. Mix well.
  6. Add in flour 1 cup at a time until well blended.
  7. Add in oats, mix well.
  8. Add in chocolate chips, coconut and pecans. Mix well.
  9. Finally add in cornflakes and mix well.
  10. Scoop cookie dough onto cookie sheets with a 2 Tablespoon cookie scoop or two spoons.
  11. You should be able to get 12 cookies on a pan.
  12. Bake for 11 minutes.
  13. Remove from the oven and allow to cool on the pan for 5 minutes before removing to a cooling rack.
