Soft & Chewy White Chocolate Macadamia Nut Cookies

A month ago, my little family and I moved for what we hope is the last time for the next 15 – 20 years.  We have moved so much over the last few years that we didn’t even bother unpacking many boxes the last time.  What was the point?  We knew it would only be a temporary stop so why bother hauling it all out just to put it all back!

We bought an old 1915 home which has been well maintained and cared for over the years and are slowly – very slowly – unpacking for the last time!!

As all of you know, when it comes to moving, you generally start asking friends to help you out.  And we were lucky enough to have a few show up!!  So as we were loading our storage unit into a moving truck, I began to ask the guys what their favorite cookies were.  One of them said “White Chocolate Macadamia Nut Cookies.”

And so what you see here, was his Thank you gift {well a small portion of it – I made him a LOT of Thank you cookies}.

We of course kept a few for ourselves, but overall, they were so easy to make and OH SO GOOD!!

Seeing as how I’d never actually made White Chocolate Macadamia Nut Cookies before, I figured it really couldn’t be that hard.  First, I wanted them to be chewy.  Second, the base of these cookies is pretty much the same as any chocolate chip cookie with the nuts and chocolate chips switched out.  Easy right?  EASY!

So that’s what I did. I took my trusty and favorite Chocolate Chip cookie recipe and adapted it to make these!  They turned out chewy and soft and absolutely delicious!  {Not to mention, he said they were “Incredible…like…So Good”.

Sounds like a winner to me!

 

Yield: 3 Dozen Cookies {approximately}

Soft & Chewy White Chocolate Macadamia Nut Cookies

Soft & Chewy White Chocolate Macadamia Nut Cookies
Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 (3.4 ounce) package of white chocolate instant pudding
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 bag of white chocolate chips
  • 1 (6 ounce) bag of chopped macadamia nuts

Instructions

Preheat oven to 350*F
Prepare baking sheets with either parchment paper, non-stick foil or a baking mat.
In a large mixing bowl cream together butter, brown sugar and white sugar.
Beat in the instant pudding powder.
Add eggs and vanilla and mix well.
Add baking soda, mix well.
Add flour 1/2 cup at a time mixing well after each addition.
Gently mix in white chocolate chips and Macadamia Nuts.
Using a small cookie scoop or a spoon, drop dough onto prepared cookie sheets.
Bake 10 - 12 minutes or until edges begin to turn golden.
