It’s a fun twist on a classic cookie! Who knew Almond Joy bars make such good cookies?

You’ll love all the texture in these cookies! Crunchy almonds. Chewy coconut. Gooey chocolate chips. Love!

They’re easy to make with simple ingredients. So they’re perfect for a quick dessert or a baking session with the kids!

This recipe is super customizable! You can tweak the mix-ins to suit your taste or to try different flavor combinations.

What Are Almond Joy Cookies?

Almond Joy Cookies are a delicious baked treat! 

They’re basically an Almond Joy candy bar but in a cookie form. 

Actually that’s exactly what they are! Especially since they have actual almond joy bars in them!

They’re made with a soft and chewy cookie base. Then they’re loaded with coconut flakes, chocolate chips, and almond pieces. Yum!

It’s a perfect recipe for anyone who loves the combo of coconut, almonds and chocolate!

What Ingredients Are in Almond Joy Cookies?

Simple ingredient almond joy cookies are the easiest cookies when you need an Almond Joy bar fix! Here’s what you need:

  • Butter: Make sure it’s at room temperature so the cookie dough mixes smoothly.
  • White Sugar & Light Brown Sugar: A mix of both for perfect sweetness and chewiness.
  • Eggs: Bind the ingredients together and add moisture.
  • Vanilla Extract: Use pure vanilla extract if possible over imitation! Way better flavor!
  • Baking Powder & Baking Soda: Helps the cookies rise and become fluffy.
  • Salt: Just a pinch to balance the sweetness.
  • All-Purpose Flour: The base of the cookie dough.
  • Old Fashioned Oats: Quick oats will give you a slightly different texture. I recommend the old fashioned.
  • Almond Joy Bars: Chopped up in small, even pieces.
  • Semi-Sweet Chocolate Chips & Coconut Flakes: Extra chocolatey coconutty goodness.
  • Almond Slivers: Adds a nice crunch and almond flavor.

How to Make Almond Joy Cookies

This Almond Joy cookie is a great recipe and makes such a fun cookie!

  1. Cream together the butter and sugars in a large bowl until light and fluffy.
  2. Add in the wet ingredients.
  3. Gradually mix in the dry ingredients.
  4. Fold in chopped Almond Joy bars, chocolate chips, coconut flakes, and almond slivers.
  5. Scoop the cookie dough onto your prepared baking sheet, and bake until  just golden brown.

Pro Tips: 

  • Don’t overbake! Remove cookies when just golden around the edges so they stay soft and chewy in the center.
  • Prepare cookie sheet with parchment paper for easy cleanup.
  • Let the cookies cool slightly on the pan before transferring to a wire rack.
  • I’m often asked what mixer I use.  I use a Bosch Universal Plus, which is incredibly powerful and efficient!

How to Store Almond Joy Cookies

To keep your easy Almond Joy cookies fresh, store them in an airtight container at room temperature. 

If you layer the cookies, place a sheet of wax paper between each layer to prevent them from sticking together. 

This way, your cookies will stay delicious and chewy for days!

How Long Do Almond Joy Cookies Last?

When stored properly in an airtight container, these chewy cookies can last for up to a week at room temperature. 

Though they never last that long around our house! We gobble them up way too fast!

Though they are a great make-ahead treat for any event since they last so long!

Or just to have on hand for a sweet snack in the middle of the night. 

Not that I wake up for cookies in the middle of the night… moving on…

Can You Freeze Almond Joy Cookies?

Yes, you can freeze almond coconut chocolate chip cookies! 

After allowing them to cool completely, place them in a single layer on a baking sheet to freeze individually. 

This is always my recommended method. This will keep them from sticking to one another.

Once frozen, transfer them to a Ziploc freezer bag or an airtight container. 

They can be frozen for up to 3 months. 

When you’re ready to enjoy, just let them thaw at room temperature. Yum!

You could also give them a quick warm-up in the oven. 

Just be careful not to overbake them. You don’t want to burn them!

What to Serve with Almond Joy Cookies

These delicious cookies are fabulous on their own! Really! Maybe with a cold glass of milk? Yeah! That’s the sweet spot!

Or some vanilla ice cream! That would be great too!

How to Cut Up Almond Joys

For this recipe, you’ll want to chop your Almond Joy candy bars into small, bite-sized pieces. 

A sharp knife works best for this. 

First cut the bars into thin slices. Then turn and chop in the other direction until you have small pieces. 

This way each cookie is loaded with the perfect mix of chocolate, coconut, and almond.

Are Almond Joys Gluten-Free?

The ingredients in Almond Joy bars themselves do not contain gluten. 

As long as you don’t use the Almond Joy Pieces candies. They do have gluten. So get the original bars.

The bars are not certified gluten-free though so there is a little risk of cross-contamination.

I don’t know if that is something you need to worry about or not. 

If you want to make this recipe gluten-free you’ll have to figure out something for the oats and flour. 

You can get gluten free oats and there are gluten free flour substitutes as well.

I personally haven’t tried the substitutes but if you do, please let me know how they turn out!

Oh my goodness! Chewy, chocolatey Almond Joy Cookies are packed with coconut and almonds. They’re perfect for satisfying your sweet tooth!

Prep Time 10 minutes
Cook Time 22 minutes
Total Time 32 minutes

Instructions

  1. Preheat oven to 350*F
  2. Line two cookie sheets with parchment paper (yes!), non-stick foil or spray with cooking spray and set aside.
  3. In a large mixing bowl (bosch), add butter, white sugar and brown sugar and mix well.
  4. Add in eggs one at a time and mix well after each addition.
  5. Add in vanilla extract, baking powder, baking soda and salt. Mix well.
  6. Add in flour 1 cup at a time until well blended.
  7. Add in oats, mix well.
  8. Add in almond joy bars and mix well.
  9. Add in chocolate chips, coconut and almonds. Mix well.
  10. Scoop cookie dough onto cookie sheets with a 2 Tablespoon cookie scoop or two spoons.
  11. You should be able to get 12 cookies on a pan.
  12. Bake for 11 minutes.
  13. Remove from the oven and allow to cool on the pan for 5 minutes before removing to a cooling rack.
