You’ll need all of the following ingredients for the sliders:

  • Ritz Crackers: The base of the sliders. Adds a nice crunch.
  • Deli Pastrami: Thinly sliced and folded for easy layering.
  • Corned Beef: Thinly sliced and folded for a delicious bite.
  • Cheese Curds: Creamy and mild, perfect for melting slightly.
  • Russian Dressing: Adds a tangy and creamy flavor.

Usually Reuben sliders would be made with Thousand island dressing.

But you’ll love this homemade dressing I promise!

And here’s what you’ll need to make the dressing:

  • Mayonnaise: Creamy base for the dressing.
  • Ketchup: Adds a touch of sweetness and color.
  • Pickle Relish: Provides a tangy crunch.
  • Lemon Juice: Fresh and zesty.
  • Worcestershire Sauce: So good!
  • Coarse Salt: Brings out the overall flavor.
  • Black Pepper: A dash for a slight kick.

  • Use fresh crackers so they’ll stay crispy.
  • For the best flavor, use high-quality deli meats and cheese.

The whole recipe card is below but here’s what you need to know:

  1. Place half of the crackers salt side down on a platter.
  2. Add a small amount of dressing on each cracker.
  3. Layer with corned beef, pastrami, and cheese curds.
  4. Add a bit more dressing on top of the cheese.
  5. Top with another cracker. Done!

Pro Tips: 

  • Don’t overload the crackers with dressing to avoid soggy buns… or soggy crackers anyway!
  • Keep the layers neat for easy handling.
  • Secure with a toothpick to keep it all together.
  • Put some parchment paper under your sliders. They can be messy!

I think that’s probably a better idea and they’ll last much longer that way.

The crackers will become soggy. And all those fresh ingredients? Blah.

If you want to prepare ahead, you can freeze the meats and cheese separately.

Corned Beef & Pastromi Ritz Sliders

Tiny bites, big flavor! Corned beef cracker sliders are the perfect party snack. Salty, savory, and easy to assemble. Ideal for St. Patrick’s Day or game night!

Instructions

  1. To make dressing, mix together Mayo, Ketchup, Pickle Relish, Lemon Juice, Worcestershire sauce, salt and pepper until smooth.
  2. Place 10 crackers salt side down on a platter.
  3. Put 1/8 teaspoon of dressing on top of each cracker.
  4. Cut corned beef & pastrami slices in half.
  5. Fold over and place two slices on each cracker.
  6. Place cheese curd on top.
  7. Add 1/8 teaspoon of dressing on top of cheese.
  8. Place top cracker on and secure with toothpick
