When it comes to the Holidays I’m always looking for fun and quick treats my kids can  help me make.

St. Patrick’s Day is no exception.  This is why these Chocolate Covered Mint Oreo’s are a must have for anyone who celebrates St. Patrick’s Day.  However these Green Oreo Cookies would also work for a baby shower, gender reveal, Easter or as a special treat for any mint lover.

As for our family, we go all out for St. Patrick’s Day and most people look at me like  I’m a little crazy.   And to be honest I am a little crazy.

I have this notion that my children are only little for a few short years and during those years I want to make them magical.  There is something about the wonder and excitement in a child’s eyes that gets me excited too!

So every year from March 1 to March 16 the naughty leprechaun comes to our house and plays naughty tricks on us.

In past years he’s switched the bedding around for my children, peed in our toilet, hidden objects under bowls on the table and told us there was a spider under there.  He’s hung our toys from the ceiling, died our milk green, stolen all of our chocolate, tossed the laundry all around our rooms to make them messy.

The leprechaun is pretty naughty!  Every day my kids wake up wondering what he’ll do that day.  And they look forward to what it might be with excitement.

The silliest trick of all was when he replaced our lucky charm cereal with lucky charm marshmallows instead!  GAH!

Then on March 17, after our attempts to catch him fail, he is in such a good mood, he does some nice things.  The naughty leprechaun will return our stolen chocolates, leave us green colored pancakes or even leave a trail of chocolate gold coins to a small green gift.

I know it sounds cheesy and corny but it really is a lot of fun.  The naughty leprechaun has been coming to our home since 2011 and hasn’t missed a year yet.

Some think he’s a cousin to Elf on the Shelf, however we never see the leprechaun.    He is magical and silly and offers up a good bit of fun.

He also likes all things chocolate.  Making these Chocolate Covered Mint Oreo’s the perfect treat to keep in your leprechaun trap!

Despite whether you get into the entire Leprechaun St. Patrick’s Day theme, these Chocolate Covered Mint Oreo’s are delicious!

And better yet they are really easy to make!  The Chocolate Covered Oreos Recipe is definitely one of the easiest treats you can whip up!

They make an inexpensive gift for friends and teachers and they always taste delicious!

DO I NEED ANY SPECIAL TOOLS TO MAKE THESE?

Nope!  You can use any container or glass jar to melt the chocolate and dip the Oreo’s.  Personally I use a fork  to remove the Oreo’s however you can purchase a chocolate candy dipping kit with special tools.

If you are nervous about dipping Oreos, then you can buy this  mold which will make the Oreos look professional and make the entire process easy!

DO I HAVE TO USE MINT OREO’S OR CAN I USE A DIFFERENT FLAVOR?

For Chocolate Covered Oreo’s you can use any flavor of Oreo as well as any stuffing thickness.  You can also use any kind of chocolate.  A popular choice is White Chocolate Covered Oreo’s.

HOW LONG DO CHOCOLATE COVERED OREO’S LAST?

Once covered in chocolate, Oreo’s should last approximately 2 weeks.  Though I would be highly surprised if they lasted longer than 24 hours!

CAN I USE CHOCOLATE CHIPS INSTEAD OF MELTING WAFERS?

Yes.  However I don’t recommend it.

Have you ever seen photos of people making chocolate dipped treats and they look like a kindergartner did them?  Sloppy, messy and really ugly?  Yep that is almost always due to the quality of chocolate used.

If a high quality chocolate or chocolate wafers are used, you’re dipped goods will turn from a child’s work of art to quality pieces you can show off.

Yes high quality chocolate and chocolate wafers cost a little more, however the results will be worth it!
