Rainbow Jello Pie consists of four delicious flavors that combined taste a bit like Rainbow Sherbet. This pie is perfect for a Rainbow themed party, St. Patrick’s Day or even Thanksgiving!

 

If you are looking for a delicious Rainbow dessert, this Rainbow Jello pie recipe is a tasty choice to make.  For us, we decided to make this in anticipation of St. Patrick’s Day coming up.  It’s a pie I’ve thought long and hard about for months and finally decided to attempt making what I’d been dreaming of.

Let’s rewind to explain just what sparked this pie.

A few months ago a friend called me up and told me she was going to be making Pie with her children. She asked me to stop by to try it.

Now for those of you who are not recipe bloggers, this is almost unheard of.  Well, at least for me.

It is a rare day that someone is willing to cook or feed me something they’ve made.  People have this crazy idea that I actually know what I’m doing in the kitchen.  And for some reason that intimidates them.  As crazy as it sounds, they think I’ll judge their cooking and baking skills harshly.

This is of course 100% false.  In fact, the opposite is usually true.  When someone actually does feed us, then I am inspired by what they’ve made.  I am usually introduced to something new and exciting and pretty much fall in love with their creations.

Telling someone this and convincing them to feed me are two very different things.  Because people wont cook for us, we  usually invite people over on a regular basis to eat with us.  I ALWAYS experiment on them and sometimes the recipe turns out great, and other times we order pizza.   Either way, we have fun with friends.

So when my friend Michelle called me up and asked me to come over to try a pie she and her children made, I was so excited!

When we showed up, we discovered that she and her kids hadn’t made one pie but 4.  

Four pies.  And not wanting to be rude, I gladly accepted 4 slices of pie.  I should probably mention that I love pie.  I am much more of a pie lover than a cake lover and so I didn’t hesitate to say YES to all the flavors.

She called it a Jello Pie, however I’ve heard others call it a cool whip pie with Jello.  It consisted of 5 ingredients.  Jello, water, yogurt, cool whip and a graham cracker crust.  The pies came out fluffy and packed with flavor thanks to the Jello.

Apparently thanks to social media, I’m one of the few people who had never heard of this kind of pie before.  So rather go with a classic one flavor pie, I wanted to change things up and do a Rainbow Jello Pie.

It only made sense to me!  I could get all the flavors of every pie into one.

The difficult part was figuring out the measurements of each ingredient.  Despite the pretty pictures you see in this post, I must confess they were not from my first pie.  

My first attempt was a truly hideous pie.  I over filled the crust, I attempted and failed miserably to do a zebra striped pie, and the entire pie was just a splotchy mess.

Then when I took this over filled hideous pie to my daughters school to pass along to the teachers, my 1 year old SAT ON THE PIE.  Granted the lid was still on, but what started off as an ugly pie was embarrassingly hideous by the time everyone got a bite.  I have to say I was pretty horrified at what I was serving people.  And yet now looking back, it was actually pretty funny.  Just when I thought the pie couldn’t get any worse, it did.

However, as with all failures, I learned from my mistakes, and came up with what you see here.  A beautiful, layered Rainbow Jello Cool Whip Pie.  Where every layer is a different flavor and yet when eaten all together tastes like Rainbow Sherbet.

And yet the real hero in all this is Michelle.  Thank you so much for the invitation to come over for Pie.  Thank you for the inspiration to create this Rainbow Jello Pie and for not being scared to cook for me!  

As far as my kids, they think this Rainbow Pie recipe is top notch.  Whether you are hosting a rainbow party or looking for an easy St. Patrick’s Day dessert, this Rainbow Jello Pie is a hit in our home!  We hope you like it as much as we do!

Rainbow Jello Pie consists of four delicious flavors that combined taste a bit like Rainbow Sherbet. This pie is perfect for a Rainbow themed party, St. Patrick's Day or even Thanksgiving!

Additional Time 2 hours 30 minutes
Total Time 2 hours 35 minutes

Ingredients

  • 1 (3 ounce) package cherry Jello
  • 1 (3 ounce) package orange Jello
  • 1 (3 ounce) package lime Jello
  • 1 (3 ounce) package lemon Jello
  • 1 cup boiling water
  • 1 (6 ounce) cherry flavored yogurt
  • 1 (6 ounce) orange yogurt
  • 1 (6 ounce) lime yogurt
  • 1 (6 ounce) package lemon yogurt
  • 2 (8 ounce) containers cool whip
  • 1 (10 inch) graham cracker pie crust

Instructions

  1. Contrary to the photos, I've found that this works best if you make each layer, one at a time.
  2. Scoop out 6 Tablespoons of each Jello flavor into it's own container. DO NOT COMBINE TOGETHER.
  3. Add 3 1/2 Tablespoons of boiling water to the lemon Jello bowl. Mix well until jello is dissolved.
  4. Add lemon flavored yogurt to jello mixture and mix until smooth.
  5. Add 4 ounces of Cool Whip (1/2 container) to the lemon Jello mixture. Mix well.
  6. Spread 3/4 of lemon jello mixture into the bottom of pie crust. Smooth out mixture to ensure it is spread evenly over entire bottom. Do not use all of the mixture.
  7. Repeat steps 2 - 6 for the Lime, Orange and Cherry Layers.
  8. Extra jello mixture in each both can be combined together to create a spare treat.
  9. Cover pie and refrigerate for 2 hours - overnight or freeze.until ready to serve.
