What Are Cheese Curds?
They’re squeaky cheese of course! Quite literally!
Cheese curds are small, moist pieces of curdled milk.
They’re often considered a young form of cheese.
They have a mild flavor and a slightly rubbery texture.
But the texture is actually really good! And squeaky of course!
You can use white or yellow cheese curds for this recipe.
And if you don’t have cheese curds, shredded cheese works too!

Corned beef quesadillas are best enjoyed fresh.
That’s my personal opinion!

Yes, you can freeze corned beef quesadillas.
Talk about a quick and easy pick me up at the end of a long day!
First, let them cool completely.
Then wrap them tightly in plastic wrap and then in aluminum foil.
That’ll keep them from getting freezer burned.
Freeze for up to 3 months and reheat in a medium heat skillet.
Or you could reheat in the oven until warmed through.
Be sure you label them so you remember what they are!
After a month in the freezer I never remember what it was if it wasn’t labeled!

Serve these quesadillas with a dollop of sour cream! Yum!
You could also serve with a side of island dressing.

Really good! The saltiness of the cheese curds in this was awesome, really worked well with the corned beef flavor.
