  • Cooked white rice: A neutral-tasting grain that adds bulk and texture to the dish.

This is the best way to get a healthy meal in when you know you won’t have time!

Simply follow the recipe instructions up to placing in the oven, then cover the casserole dish with plastic wrap and store it in the refrigerator for up to 24 hours. 

When you’re ready to bake, remove the plastic wrap and bake the casserole as directed.

Instructions

  1. Preheat oven to 350*F
  2. Spray a 9 inch casserole dish with cooking spray and set aside.
  3. In a bowl combine sour cream, salsa, black beans, cheddar cheese and green onions.
  4. Fold in rice and chicken.
  5. Gently spread rice mixture into prepared casserole dish.
  6. Bake for 25 minutes.
  7. Remove and serve with a sprinkle of cilantro on top.
