The texture of mango can change significantly in the freezer. 

I find it becomes way too squishy and not at all what you want.

How Do You Cut a Mango?

  1. Stand the mango on its end, stem side down. The seed is in the center, running from top to bottom.
  2. Cut down one side of the mango, just past the seed. 
  3. Repeat on the other side. You’ll end up with two large pieces, or “cheeks,” and the central seed portion.
  4. Make lengthwise and crosswise cuts in the flesh of each cheek, being careful not to cut through the skin.
  5. Use a spoon to scoop out the diced mango pieces, or turn the cheek inside out and cut the cubes off from the skin.

Instructions

  1. In a gallon size freezer type bag, combine chicken, garlic, ginger, soy sauce, lime juice & sesame oil.
  2. Marinate in refrigerator for 4 hours to overnight.
  3. While chicken is marinating, create Mango Salsa and refrigerate until ready to use.
  4. Grill or broil for 5 minutes each side or until cooked through. If baking, bake at 350*F for 30 minutes, flipping halfway through, or until done.
  5. When finished cooking, plate and top with a generous amount of Mango Salsa.
  6. Devour!
