Avocado Corn Salsa is a quick and easy side dish, appetizer, snack, or main dish topping! It comes together in minutes and tastes amazing!

If you’ve ever thought, maybe I should mix my guacamole with my salsa, you’re already on your way to this amazing dip. Beans, corn kernels, avocados, jalapenos, and Salsa Verde all combine to make a yummy corn avocado salsa.

You’re going to love a lot about this salsa, but here’s a few things you need to know. The texture is out of this world. Crunchy, creamy, soft, but hearty too, it’s perfect for chips.

This black bean corn avocado salsa recipe is easily customizable.  Want to switch up one of the veggies? Can’t stand jalapenos? No problem! Make it your own. Toss in cherry tomatoes, fresh cilantro, green onions or even red pepper flakes!

Corn and avocado salsa is also quick and easy. I can whip it up as a party appetizer in almost no time. And corn avocado black bean salsa is a total crowd-pleaser!

Every time I’ve served this, it’s gone so quickly, I need to make sure to grab some for myself before it gets devoured.

What Ingredients are in Avocado Corn Salsa?

Here are the simple fresh ingredients you’ll need to whip up a delicious avocado corn salsa recipe.

  • Ripe Avocados: You’ll want to chop these up to small, bite sized pieces.
  • Beans: I love this salsa with black beans but you could also substitute with pinto beans.
  • Corn: Canned corn makes this a snap. If you’ve got fresh corn you could also use that.
  • Onion: Red onion goes really well in this salsa but a white onion would work well too.
  • Jalapeno Pepper: Be sure to remove the seeds as they are the spicy part and you don’t want this to be too spicy.
  • Garlic: You’ll want about 1-2 cloves of garlic but you can add this to taste.
  • Salt: Avocados and salt are like peanut butter and jelly. They’re just meant to be.
  • Salsa Verde: The fresh lime juice in this is what helps keep your avocados from turning brown.
  • Chips: Any type of corn tortilla chips or your favorite tortilla chips will work.

Pro Tips:

  • If you feel like something is still missing at the end, it’s probably salt. Avocados love salt.
  • If you can’t get enough spicy foods, keep the seeds in the jalapenos. Just be sure not to share with the kids!
  • You need fresh avocados. Look for ones that give slightly when pressed but aren’t too soft.
  • If you don’t like raw red onions, heat them in the microwave slightly to cook them.

How to Make Avocado Corn Salsa 

  1. Mix: It’s really that simple! Just mix all the chopped and drained ingredients, and serve.

Pro Tips:

  • Mix gently! You don’t want to creamy avocados or it’ll be more guacamole than salsa.
  • You will need a medium bowl or large bowl to fit all the salsa ingredients.

How to Store Avocado Corn Salsa 

Keep any leftover avocado corn salsa in the fridge, covered. The avocados will go brown fairly quickly, even with the salsa verde. So if you’re done eating it, pop it in the fridge right away to help it last longer.

Can I Make Avocado Corn Salsa Ahead of Time? 

Yes! I love making this quick avocado corn salsa early. However, when I say early, I mean up to a few hours. While the avocado salsa will still taste good the next day, it’ll be brown and much less pleasing to the eye.

Can I Freeze Avocado Corn Salsa? 

You can’t freeze creamy avocado dip in its current form. The reason being that the avocados will not have any sort of good texture by the time they unthaw.

However, you can blend this salsa if you know you aren’t going to get to it all. Then use the salsa as a dressing or on top of cooked chicken or fish. Then you can freeze any dressing you aren’t using.

Keep in the freezer for up to two months. Be sure to write the name and date on the freezer safe container so you don’t forget what it is.

How Long Does Avocado Corn Salsa Last 

Avocado corn salsa will last 1-2 days in an airtight container in the fridge. The problem is the avocados. There just isn’t much that can be done to keep them fresh once cut and opened.

When air reacts with the avocados, it’s called oxidation. It quickly turns them brown and not great. If you are eating the avocado corn dip the next day, and it’s brown, it should still taste okay.

But if it’s still sitting in the fridge after 48 hours, it’s safest to toss it out.

Yes! Healthy recipes are always a win and this avocado-corn salsa recipe fits the bill. Avocados are one of the perfect first baby foods for a reason.

Loaded with vitamins, minerals, and healthy fats, they’re something we all could use more of. Not to mention the protein from the beans.

We’ve served avocado corn salsa at all sorts of functions! Birthday parties, baby showers, football games, BBQs, Potlucks, etc. So we’ve got lots of experience with how to serve this delicious salsa.

Obviously one of our favorite ways, and the easiest way too, is just with a good chip. It tastes great and is the perfect side dish. Here are some other yummy ways to serve your salsa.

  • Topping: This salsa makes a wonderful topping for grilled chicken, fish, steak, pork or shrimp.
  • Salad: Toss the salsa with some greens and you’ve got an avocado corn salad.
  • Rice: When paired with fluffy buttered rice, this avocado corn salsa really takes the cake.
  • Tacos: Any sort of taco on taco night can be improved by the addition of this salsa.
  • Pasta: Noodles actually taste great as a bed for the avocado salsa.
  • Eggs: Lay the salsa right on top of your morning eggs or toss them all in a tortilla for an egg taco.
  • Burritos: Burrito bowls taste really great with the addition of corn salsa recipes.

Ingredients

  • 6 avocados, chopped into small bite sized pieces
  • 1 can of black beans drained and rinsed
  • 1 can of corn, drained
  • 1/2 red onion finely minced
  • 2 Jalapenos - seeds removed, minced
  • 1 teaspoon garlic, minced (1 - 2 cloves)
  • 3/4 teaspoon salt
  • 1 cup of salsa verde
  • Corn Chips

Instructions

  1. Chop avocados and place in a bowl.
  2. Add black beans, corn, red onion, jalapenos, garlic and salt.
  3. Mix well.
  4. Add Salsa Verde and gently mix.
  5. Serve immediately or refrigerate for a few hours until ready to serve.
