Cheesy Bacon Spinach Dip

With only 5 ingredients, this Cheesy Bacon Spinach Dip made in the crock pot is a crowd favorite! Just toss the ingredients in and soon you’ll have a delicious flavorful dip your guests will rave about! Perfect for a work party, pot luck, tailgating or game night with friends!

 

 

When it comes to hot party dips, my husband and I can’t seem to get enough.  We don’t just make them for parties.  We make hot appetizer dips regularly when we have the munchies and this Cheesy Bacon Spinach dip is our newest obsession.  Don’t get me wrong, our Jalapeno Popper Dip, Sausage Cheese Dip and Crock Pot Chili Cheese Dip are all still very much in demand at parties we host.  

My husband is NOT a fan of spinach.  Generally speaking whenever he hears there is cooked spinach in something he skips right over that dish.  I will admit it took me a good bit of coaxing to get him and my VERY picky 9 year old to try this dip.  

I just knew they’d love it if they were willing to get over their aversion to cooked spinach.  And sure enough, just as predicted, once they tried it, they were both hooked.  Yummy melted cheese with bacon, spinach and diced tomatoes makes for a very tasty appetizer.  

We make this Cheesy Bacon Spinach Dip in the crock pot, however you could also make it on the stove or in the microwave, depending on how much time you have.  We personally love the crock pot because we can keep it on warm so the cheese stays smooth and creamy for the entire party.  Don’t worry, I’ll give you directions on how to make it all three methods!

 

 

What is in Cheesy Bacon Spinach Dip? 

  • Frozen Chopped – You’ll need to thaw this before using and ring out ALL the water.  If you don’t, then you’ll have Bacon Spinach Soup instead of dip!
  • Velveeta Cheese – Though not the healthiest cheese in the world, it sure is tasty!  And when melted offers a creamy smooth dip!
  • Cream Cheese – This is the most undervalued ingredient in this dip.  Never mentioned in the title, or seen in the photos, this secret ingredient balances out the strong cheese flavor while making the dip extra creamy.
  • Ro*telTomatoes with Green Chilies – Diced tomatoes are the ingredient that will not only add flavor but also spice – if you want it.  If you like more of a spicy dip, use original or spicy Ro*tel.  If you want to taste your food more than feel it, I suggest mild!
  • Bacon – Yummy bacon adds so much flavor!  It’s our favorite ingredient!

 

 

How to make Cheesy Bacon Spinach Dip in the Crock Pot:

Step 1: Cook the bacon!  You’ll want crispy bacon for this recipe.  You can cheat and buy precooked bacon or cook it up yourself. 

Step 2: Add all ingredients to your crock pot!  I used a 3 Quart Crock Pot for this dip.  However if you plan on doubling or tripling the recipe you could definitely use a larger crock pot.  

Step 3: Serve!  If you’re serving at a party, just keep your crock pot turned to low and keep on warm.  If you notice dip bubbling along the edges, turn your crock pot off and turn back on if dip starts to solidify.  

 

 

How to make Cheesy Bacon Spinach Dip on the Stove:

Step 1: Cook the Bacon in a dutch oven or large pot.  You’ll be using this pot again, so make sure it’s deep enough to handle the dip. Once bacon is cooked, drain pot of any excess bacon grease.  Do NOT wipe out pot. That little bit of grease will add flavor.  Chop bacon.  

Step 2: Add bacon back to pot as well as all other ingredients.  Stir well and cook over medium low heat stirring every 5 minutes until nice and creamy.  Mixture should be ready to enjoy in about 20 minutes.

Step 3: Serve with your favorite dip-able foods.

 

 

How to make Cheesy Bacon Spinach Dip in the Microwave:

Step 1: Precook and crumble the bacon OR use precooked bacon, crumbled.

Step 2: Place all ingredients into a microwave safe bowl and cook on high for 2 minutes.  Remove and stir.  Repeat every 2 minutes until dip is creamy and hot.

Step 3: Serve immediately.  If mixture starts to thicken, microwave again for 2 minutes.  

 

 

What to dip into Cheesy Bacon Spinach Dip

  • Carrots, Celery, Bell Peppers, Broccoli, Cauliflower – Any of your favorite vegetables that taste great with cheese!  
  • Crostini or Toasted Bread – Little mini toasted crostinis or toasts taste great dipped in this bacon spinach dip. 
  • Crackers or Tortilla Chips – This is my favorite!  A chip or cracker that can be dipped into this mixture will offer a bit of a crunch along with keeping your fingers clean.
  • Bacon – My 9 year old prefers this method.  Though not the healthiest, she loves to dip a piece of bacon into this hot spinach dip. 

 

 

How long does Cheesy Bacon Spinach Dip last?

If you are unable to eat all of this hot bacon spinach dip in one sitting, then you can store in the fridge for up to 1 week.  Nuke in microwave or cook on stove to soften cheese and make it creamy again.

Can you freeze Cheesy Bacon Spinach Dip

Yes!  If you have leftovers that you wont be able to eat within a few days, freeze them!  

Pro Tip:  Freeze your dip in individual portions so you’re only thawing what you will eat in one sitting.  To thaw, you can leave dip in fridge for 24 hours or nuke in microwave or cook on stove top.  All methods are acceptable.

Ingredients

  • 1 (10 ounce) package of frozen chopped pinach - thawed and drained.
  • 1 (16 ounce) package of velveeta cheese
  • 8 ounces cream cheese
  • 2 (10 ounce) cans rotel tomatoes with green chilies
  • 10 slices of bacon, cooked crispy and crumbled.

Instructions

  1. Combine all ingredients into a crock pot.
  2. Cover and cook for 1 1/2 hours, stirring every 30 minutes.
  3. Remove lid and stir well.
  4. Serve on warm setting with chips and crackers.
