  • In a pinch you could use bread crumbs but we find they get a little soggy. Stuffing mix is best. 
  • Make sure to roll them into a little ball. You want them to be bite sizes and not baseball sized. 
  • To make gluten-free spinach balls, use gluten free stuffing.

  1. Mix spinach, stuffing mix, and parmesan cheese in a large bowl.
  2. Add eggs, butter, salt, pepper, onion, and garlic powder.
  3. Scoop the batter and roll in additional parmesan cheese.
  4. Place on the prepared baking sheet and bake until golden brown.

Pro Tips: 

  • For even baking, make sure the spinach stuffing balls are evenly spaced on the baking sheet.
  • Cover baking sheet with parchment paper for easy clean up.

Transfer to a freezer-safe bag or container and freeze for up to 3 months.

Bake from frozen, adding a few extra minutes to the baking time.

I think this is the best way cause then you don’t have to worry about them going bad in the fridge.

But if you are going to cook them in the next 24 hours, you could always just prepare the mixture.

Then make the balls and cook them when you’re ready to eat them.

Spinach stuffing balls are crispy, herby, and secretly veggie packed. Perfect for sneaking greens into snack time.

Prep Time 20 minutes
Cook Time 14 minutes
Total Time 34 minutes

Instructions

  1. Preheat oven to 350*F
  2. Melt butter in the microwave for 30 seconds and set aside to cool.
  3. Prepare a baking sheet by covering it in parchment paper, cooking spray or non-stick foil.
  4. Make sure your spinach is dry and free of as much liquid as you can.
  5. Combine spinach, stuffing and parmesan cheese. Mix well, breaking up spinach so there aren’t any clumps.
  6. Add beaten eggs and mix well.
  7. Add cooled butter and mix well.
  8. Add salt, black pepper, onion and garlic. Mix well.
  9. Using a 2 Tablespoon cookie scoop, scoop out batter and roll in remaining ½ cup parmesan cheese.
  10. Place the prepared spinach balls on the prepared baking sheet. (20 should fit on a sheet)
  11. Bake for 14 minutes
  12. Makes approx. 40 balls.
