This has got to be my new favorite thing! And the addition of coconut? Really puts this over the top!

  1. Chill the evaporated milk until icy.
  2. Sprinkle gelatin over key lime juice and water, then add sugar and heat gently in small saucepan.
  3. Whip the chilled milk to soft peaks, then fold in the gelatin mixture.
  4. Pour into the crust, add shredded coconut, and let sit in the fridge.

  • Be sure the gelatin mixture is fully dissolved over medium heat.
  • Gently fold in the ingredients to maintain the pie filling’s airy texture.
  • Use a stand mixer for the best results in whipping the evaporated milk.

It’s a great time-saver!

And since it’s already meant to be served cold, you don’t even need to do anything to it before you serve it.

Yep, you’ve definitely got to keep this key lime pie recipe in the fridge. 

First of all, food safety. I really don’t want you getting food poisoning over there. Even if it is delicious.

Second, that’s how it keeps its fluffy texture. Your taste buds will be a lot happier if you keep it in the fridge.

So bring it out, serve it, and if you’ve got any leftovers (not likely! It’s really yummy!) then put them back in the fridge.

Keep this perfect summer pie in the fridge, covered the whole pie dish with plastic wrap.

Or you can transfer any leftover pieces to an airtight container. 

It stays fresh and delicious for 2-3 days.

Though it never lasts that long around my house! Somehow in the middle of the night it disappears…

Can You Freeze Coconut Key Lime Chiffon Pie?

While you can freeze this coconut lime pie, I recommend enjoying it fresh for the best texture. 

After thawing, it tends to have a bit more of a grainy texture that I don’t really like.

If you do freeze it, wrap it well in plastic wrap and thaw it in the refrigerator before serving.

Is Coconut Key Lime Chiffon Pie Gluten-Free?

No, it’s not gluten free because of the graham cracker crust.

But, you can easily make it gluten-free by using a gluten-free graham cracker crust. 

I believe you can pick those up from most grocery stores. 

And you could also find some gluten-free cookies and make a cookie crust instead if you can’t find the crust.

Just mix cookie crumbs with a little bit of melted butter and then press into the bottom of your tart pan or pie pan.

The rest of the ingredients are naturally gluten-free.

Can You Make This Pie Without Coconut?

You can absolutely make this traditional key lime pie without the coconut! 

If you’re not a fan of coconut, simply leave out the coconut flakes.

You don’t need to make any other changes.

You’ll still have a deliciously zesty and creamy key lime pie to enjoy.

And if you want extra coconut? Try a coconut crust! Just add little bit of coconut to the crust. Boom!

And by the way, you can also make this with regular limes if you don’t have key limes. The flavor is just slightly different.

  1. Pour evaporated milk in a mixing bowl, place in freezer until ice crystals form (about 30 minutes)
  2. Sprinkle gelatin over water and key lime juice in a small saucepan. Let stand for 1 minute.
  3. Stir in sugar and cook over medium heat until all sugar is dissolved (about 2 minutes)
  4. Stir in key lime rind.
  5. Beat evaporated milk at high speed with an electric mixer until soft peaks form.
  6. Gradually add gelatin mixture, beat at high speed until mixture is combined. Do not overmix.
  7. Pour mixture into crust, sprinkle shredded coconut around the edges
  8. Cover and chill one hour or until set
  9. Garnish with sliced key limes (optional).
