If you are a fan of guacamole, then you will love this Avocado Dip. 

This Avocado Dip has avocado, corn, red onions and cilantro which are all complimentary ingredients and all make my taste buds very happy.  

This easy Avocado Dip is absolutely tasty as is and easy to adapt to your tastes. 

In addition to enjoying this as a late night snack or party appetizer, we love using it as a main component in my favorite Chicken & Avocado Wraps.  

Trust me, you’ll want to try these.  

They are perfect for a snack, appetizer or lunch; and are so incredibly easy to toss together!

When it comes to dips, this Avocado Dip really hit the spot for me. 

I’m a huge fan of corn and in general try to sneak corn into most meals – whether included or on the side.

The corn adds a hint of sweetness and the flavors blend so well together thanks to the cilantro that it really is hard not to go back for another bite and then another.  

And before you know it, you’ve double dipped {perhaps on purpose} and now you can’t share with others.  

Nuts! 

This Avocado Dip is great by itself or as a topping on your favorite tacos, burritos or wraps. 

Add this to a salad or pulled pork sandwich. 

The ways to use this dip are endless. 

This Avocado Dip was a winner in our house and a dip I’ll be making anytime I have avocados!

It makes a fantastic item for a barbecue or picnic and really only takes a few minutes to toss together!

Avocado Dip

Avocado Dip
Prep Time 10 minutes
Inactive Time 2 hours
Total Time 2 hours 10 minutes

Ingredients

  • 1 (15.25 ounce) can corn, drained
  • 1 red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, minced
  • 2 avocados, diced
  • 5 cloves of garlic or 2 Tablespoons garlic paste
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 3 Tablespoons apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

In a medium bowl mix corn, bell pepper, onion, cilantro and avocado.
In a small bowl whisk garlic, olive oil, lemon juice, apple cider vinegar, salt & pepper.
Pour oil mixture over corn mixture and stir well.
Cover & chill 2 hours or overnight.
Serve immediately with your favorite dipping item - we like tortilla chips.

Does this Avocado dip turn brown after you leave it out for a while? Most of the Avocado things you make discolor. Can you help with this question

Great question Joan! The Lemon Juice in the recipe will help prevent the avocados from browning. I've been able to enjoy this for a few hours without any browning. However by the next day (in the fridge) there are starter signs of browning. I hope this helps!
