If there is one thing I love it’s a fresh, delicious and easy lunch.

These Chicken & Avocado Wraps are absolutely delicious.  

Let’s examine them.  

Chicken, avocados, corn, garlic, cilantro – what is there not to love about this tasty dish?

Plus the entire thing comes together in a matter of minutes.

I suggest making the avocado dip the night before you make these.

Perhaps snack on it for a bit when you get the midnight munchies then put the rest away.  

The next day, you can either whip these up in a matter of minutes and pack them up for a school lunch or work lunch or you can package the ingredients separately and take them with you to assemble later.

Personally I like to cook up an extra chicken breast then it’s also ready to go the next day.  

However, you could easily substitute home cooked chicken with frozen fajita chicken or even frozen chicken strips, making life even easier.

I made these Chicken & Avocado Wraps on a whim one day and, the only thing I could utter the entire time was – wow….wow.  Mmm Mmm Mmm.  

To which my 2 year old watching me said… nom…nom…nom nom nom.  

This made me giggle.  

He was mimicking me and my absolute love for this simple meal.

These Chicken & Avocado Wraps are something that is packed with flavor and so incredibly easy to whip up.  

It is officially my favorite quick lunch meal and think it will become yours too.

 Great for a snack, lunch or even dinner!  Plus it’s fantastic for on the go, in the car or at work.

Give this simple dish a try and then you’ll see why I love it so much!

Chicken & Avocado Wrap

Ingredients

  • 2 Tortillas
  • 1 cooked & sliced chicken breast
  • 1/2 cup Avocado Dip
  • Lettuce {optional}
  • Bacon {optional}
  • Tomatoes {optional}

Instructions

Lay tortillas flat.
Place chicken flat in the center of tortilla.
Scoop approximately 1/4 cup of Avocado Dip.
Fold up tortilla like a burrito and slice in half.
Enjoy with your favorite side dish.

Hi if it's for lunch would I have to heat it up in the microwave ? Or is it best to eat cold ? I'll be storing it in the refrigerator for the next day just wondering since the avocados go bad quick

If you are doing it for lunch the next day I'd just wait and assemble it at lunch time. That way your avocados are fresh! Then you can warm up your chicken by itself and add it to your tortilla. :) However if you whipped it up the night before and ate it the next day, you could definitely do it cold. Granted I'm someone who also eats cold pizza so take that suggestion with a grain of salt.

Faith I really should do a post on how I cook my chicken. I'll add it to my list of future recipes! I preheat my oven to 325*F. I then put 1 Tablespoon of butter and 1 Tablespoon of olive oil in a skillet and heat it up to medium heat. I then rinse my chicken, pat it dry and toss it in my pan. I cook it for 2 -3 minutes on each side getting that nice golden cooked look. Once each side has good color I put the skillet into the oven and let it bake for 10 minutes. I then pull the pan out, flip my chicken and bake it for another 10 minutes. The chicken comes out perfect and juicy every time. I've never had to suffer through tough stove top cooked chicken since coming up with this method! I hope you enjoy!
