Avocado chicken salad is a really healthy option. It contains a lot of vitamins from the vegetables, lean protein from the chicken, and healthy fats from the avocado.

The flavors in this salad are simply delicious! It the perfect combo of tangy lime, fragrant cilantro, creamy avocado, and flavorful chicken.

You can have it as a side salad, a meal, or even for lunch or supper. Additionally, it works great for picnics and celebrations.

Making it is quick and easy, particularly if you use a rotisserie chicken!

This avocado chicken salad recipe is a full meal in a bowl. Unless you want to, you don’t need to make anything else!

This avocado chicken salad recipe is the only thing you’re gonna want to eat this week!

Here are the salad ingredients you’ll need:

  • Olive Oil: This makes the base of our vinaigrette.
  • Lime Juice: It adds a fresh, zesty flavor to our salad.
  • Cilantro: This herb makes the salad super aromatic.
  • Salt and Pepper: These seasonings bring out all the other flavors.
  • Romaine Lettuce: It’s crisp and refreshing, a great base for our salad.
  • Cherry Tomatoes: They add sweetness and a pop of color. You could also use grape tomatoes.
  • Cucumber: It’s cool and crunchy, the perfect salad ingredient.
  • Chicken: Use either cooked chicken breast or even easier, a rotisserie chicken!
  • Avocado: It makes the salad creamy and adds healthy fats.

Pro Tips:

  • Leftover chicken is always welcome! 
  • Use fresh cilantro and ripe avocados. Yum!
  • If you’re not a cilantro fan, you can always choose to leave it out.
  • Lemon juice can be swapped for lime juice but it’ll have a different flavor.

Grab your mixing bowl and get ready for an easy meal! 

Here’s how to make this healthy chicken salad

  1. First, we mix the vinaigrette and add the chicken to it.
  2. We let the chicken marinate for a bit.
  3. In the meantime, we prepare our salad base with lettuce, tomatoes, and cucumber.
  4. Then, we add the marinated chicken and diced avocado on top.
  5. A sprinkle of fresh ground pepper, and our salad is ready to serve!

Pro Tips:

  • This is a quick meal with leftover chicken. Or you can prepare everything while your chicken cooks.

Can You Freeze Avocado Chicken Salad

It’s not a good idea to freeze this delicious recipe. 

The crisp lettuce, juicy tomatoes, and creamy avocado will not have the same texture after freezing and thawing.

Actually, I don’t think salad greens should really ever be frozen. 

While other things you can freeze and later turn into smoothies, lettuce is not one of them.

How to Keep Avocado Chicken Salad from Turning Brown

To keep the avocado from turning brown, make sure to add plenty of lime juice!

This is a natural way to slow down the browning process.

You shouldn’t need to add any more lime juice than the recipe calls for though. It’s plenty.

Absolutely! This delicious salad is packed with lean protein from the chicken, healthy fats from the avocado, and plenty of vitamins from the veggies.

This salad is not just healthy but it’s also family friendly! That’s why it’s one of my personal favorites!

All those healthy nutrients and the kids actually eat it! 

To be honest, I’m not sure I even knew what an avocado was as a kid!

But with our grocery stores having everything from everywhere now, it’s so easy to pack in the nutrients!

What Side to Have With Chicken Avocado Salad

This great recipe is so hearty, it’s a full meal on its own. 

But if you want a little something on the side, it goes really well with pita bread or a light soup.

Even sandwich bread works if you want to throw together some healthy avocado chicken salad sandwiches!

How to Cut Avocado for Salad

When cutting avocado for salad, I like to halve it, remove the pit, peel it, and then dice it into bite-sized chunks.

You don’t want larger avocado slices as you want to be able to fit them on the fork with the rest of your ingredients.

You also don’t want mashed or small avocado pieces because you do want some bite there!

So stick with bite sized pieces and you’ll be good to go!

How to Store Leftover Avocado Chicken Salad

You can store leftover salad in an airtight container in the fridge for about 2-3 days. 

Just remember to give it a good stir before serving.

If you’re serving it at a picnic or another hot weather party, just be sure not to leave it sitting in the sun.

That sun can wreck food really quickly!

  1. In a small bowl combine olive oil, lime juice, cilantro and salt. Mix well.
  2. Add chopped or shredded cooked chicken to vinaigrette. Mix and set aside to marinate for 5 minutes or longer.
  3. In individual plates or bowls, or in a serving bowl, layer lettuce, tomatoes & cucumber.
  4. Top with marinated chicken and avocado.
  5. Sprinkle with fresh ground pepper.
  6. If you feel your salad needs more vinaigrette, gently drizzle what is left in your bowl over the salads.
  7. Enjoy!
