Actually, I don’t think salad greens should really ever be frozen.

Enjoy this quick and healthy Chicken Avocado Salad recipe, packed with fresh ingredients and full of zesty flavors. Perfect for a light lunch!
Ingredients
- 3 Tablespoons of extra-virgin olive oil
- 2 Tablespoons of fresh lime juice
- 1 Tablespoon of cilantro, finely chopped
- 1/4 teaspoon salt
- 1 head of romaine lettuce, chopped (about 8 cups)
- 1 small package of cherry tomatoes, cut in half or quartered
- 1 medium cucumber, sliced and quartered
- 1 pound cooked chicken breasts, shredded or cubed - Use a Rotisserie Chicken!
- 1 avocado, pitted, peeled and diced.
- Ground black pepper (per tastes)
Instructions
- In a small bowl combine olive oil, lime juice, cilantro and salt. Mix well.
- Add chopped or shredded cooked chicken to vinaigrette. Mix and set aside to marinate for 5 minutes or longer.
- In individual plates or bowls, or in a serving bowl, layer lettuce, tomatoes & cucumber.
- Top with marinated chicken and avocado.
- Sprinkle with fresh ground pepper.
- If you feel your salad needs more vinaigrette, gently drizzle what is left in your bowl over the salads.
- Enjoy!
