I am on a muffin kick these days and these Coconut, Chocolate & Banana muffins are absolutely amazing.

Really what is there not to love about muffins? 

They are the ultimate and perfect breakfast on the go. 

A tasty and filling snack and if made just right {like these} make a great dessert too!

Now if we are going to be completely honest, I may have eaten {by myself} over a dozen of these. 

Not all in one day, but over the course of a few days. 

And I wont apologize for it. 

These are soo good. 

So the idea for these came from a comment I received on my Coconut Banana Bread. 

Someone mentioned that the addition of chocolate chips would be amazing with my bread.

{Light Bulb!}. 

Um..Yes, I 100% agree that chocolate does sound like a nice addition to my Coconut Banana Bread. 

Except instead of a loaf {which you can easily convert these into}, I chose to make muffins. 

I can’t express to you just how much I love these. 

My #1 favorite muffin – especially since I can eat them for breakfast!

Coconut, Chocolate & Banana Muffins
Coconut, Chocolate & Banana Muffins

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 24 muffins


  • 1/2 cup vegetable oil
  • 1 cup white granulated sugar
  • 2 eggs (vegan option use 1/2 cup apple sauce)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 extra ripe bananas, mashed.
  • 2 1/2 cups all-purpose flour
  • 1 cup canned unsweetened coconut milk, full fat
  • 1 cup sweetened shredded coconut flakes
  • 2 cups milk chocolate chips


  1. Preheat oven to 350*F
  2. Prepare muffin tin with liners.
  3. In a bowl combine oil and sugar.
  4. Add eggs (or apple sauce) and mix well.
  5. Add vanilla extract and almond extract, mix again.
  6. Add baking powder, baking soda and salt. Mix again.
  7. Add mashed bananas and mix well, scraping sides of bowl as needed.
  8. Alternately add flour & coconut milk, starting and ending with flour, mixing well after each addition until combined.
  9. Add coconut and mix again.
  10. Add chocolate chips
  11. Scoop batter into muffin cups, filling 3/4 full.
  12. Bake for 25 minutes or until toothpick inserted into middle of muffin comes out clean.
