If you love the flavor combination of Limes and Cilantro, then you are in for this tasty dish of Lime Cilantro Rice.
Now truth be told, I’ve had this many times, in a variety of different recipes.
But truth be told, I always come back to this one.
This Lime Cilantro rice is easy, straight forward and gives a crisp clean flavor.
It’s not muddled down with vegetable broth or other flavors.
This rice dish allows the full flavors of Lime and Cilantro to mingle together to create a tasty dish that can be served with something or it is bold enough to stand on it’s own two feet.
For me, I love eating it as a side dish with Mexican food.
However I’ve also had it topped with pulled pork and in a salad. The ideas are endless on how to enjoy this rice.
Create your own Cafe Rio style meal or even Chipotle style rice bowl.
I love how this rice is simple to make and doesn’t require a fancy rice maker, but can easily be recreated on the stove.
Rice itself really isn’t difficult to make, as long as you know your stove and follow the directions. After a few tried it will literally become second nature.
We eat rice weekly in our home, it’s one of my favorite go-to side dishes and this Lime Cilantro rice is featured heavily in our home during the months of April and May as we gorge ourselves on Mexican food (my favorite genre).

Lime Cilantro Rice
Ingredients
- 2 cups water
- 1 tablespoon butter
- 1 cup Jasmine rice
- 1 teaspoon lime zest
- 2 tablespoons fresh lime juice
- 1/3 cup chopped cilantro
Instructions
Rinse rice in warm water & drain.
Add water, and butter to rice.
Bring to a boil, stirring regularly so rice does not sick to bottom of pot.
Cover pot, and reduce heat to low.
Cook covered for 20 minutes.
Once rice is done, stir in lime zest, juice and cilantro. Mix well.
Serve immediately.

I know this is a strange question , but if you don’t like the taste of cilantro what do suggest as a good alternative . I know either ya like it or you don’t ! Haha We don’t in this house . But love Mexican flavors

Suzanne, I suggest just going with a lime rice if you don't like the taste of cilantro. Personally I don't like raw cilantro but I love cilantro cooked in recipes. So skip the cilantro and just make lime!
