What do you need to make chicken noodle casserole? 

This recipe is so simple! To make it, you’ll need the following: 

  • Rotisserie chicken diced rotisserie chicken is one of the easiest and TASTIEST ways to spice up any dish. No cooking it yourself and so much fantastic flavor! You can also use leftover turkey too!
  • Cream of chicken soup – this is part of your creamy base and also adds a lot of flavor to your casserole. 
  • Milk – the other component of your creamy base. The milk will also provide the moisture for cooking the noodles in the casserole. 
  • Uncooked macaroni noodles – allowing the noodles to cook within the sauce keeps all the starchy goodness in the casserole and really amplifies the creaminess! 
  • Onion – the onion adds a lot of savory flavor to the dish. 
  • Frozen peas and carrots – does it get any simpler than this? Pre cooked chicken, pre chopped veggies — it’s a weeknight dinner’s dream! 
  • Velveeta cheese – melts in your mouth and oozes cheesy deliciousness. This cheesy chicken noodle casserole is going to be AMAZING! 

 

 

How to make chicken noodle casserole:

I love recipes that taste great with minimal effort. In fact, sometimes it seems the easier the recipe is, the better it tastes! This creamy chicken noodle casserole is no exception. 

  1. Toss EVERYTHING into a bowl.  Yep, you read that right.
  2. Mix.  Make sure your bowl is big enough to mix it up.
  3. Bake.  Toss it in and forget about it until your timer goes off!

What kind of noodles do you use in chicken noodle casserole?

In this chicken and noodle casserole we used macaroni noodles; but really you can use any type of noodle! Substitute your favorite noodle type. 

Be sure to compare cooking times for any noodle you substitute. You might find that some need longer or shorter times to cook. For example, egg noodles cook much faster than other pastas. So if you want this to be a chicken EGG NOODLE casserole, you’ll need to reduce your cooking time by 10-15 minutes. 

 

 

How to make chicken noodle casserole from scratch: 

If you prefer to avoid canned cream of chicken soup or want a more “from scratch” meal, you can easily make your own cream of chicken soup! 

Sauté your onions in 4 tablespoons of butter over medium heat. When onions are translucent, stir in ½ cup of flour. Stir frequently until flour begins to get slightly golden, about 1 minute, then slowly pour in 2 cups of chicken stock a little bit at a time and whisk well. Mixture should be quite thick.

Slowly add 1 cup of whole milk, continuously whisking until mixture becomes very thick (the consistency of cream of chicken soup). Once thickened, remove from heat and stir in ¼ tsp of garlic powder and celery salt. Season with salt and pepper to taste. 

If using in other recipes you can also toss in bits of cooked chicken as well for an authentic look.

The beauty of casseroles is they are entire meals in one pan! You’ve got your starchy noodles, your protein-packed chicken, dairy-filled sauce, and vegetables all rolled into one dish! Can you freeze chicken noodle casserole?

Yes, you can freeze this chicken noodle casserole recipe! And because you’re working with precooked meat, you can (and should!) freeze it before you ever bake it. Simply combine all the ingredients, cover or wrap tightly with foil, and freeze. 

Place the casserole in the fridge the night before you want to cook it so it can thaw. If you can, you might want to give it a quick stir before cooking it in the oven. Note: If you use skim milk, it has a higher likelihood of separating in the freezer. I recommend using a higher fat content milk if you know you’re going to freeze the casserole before cooking.

Ingredients

  • 2 cups cooked chicken - rotisserie, canned chicken or leftover turkey work great!
  • 2 (10 ounce) cans of cream of chicken soup
  • 2 cups milk
  • 16 ounce package uncooked macaroni noodles
  • 1 small yellow onion, diced
  • 1 (10 ounce) package of frozen peas and carrots
  • 4 ounces Velveeta cheese, shredded
  • 1/2 cup chopped onion
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350*F
  2. Grease a 9x13 casserole dish and set aside.
  3. Mix all ingredients together in a bowl. 
  4. Pour mixture into casserole dish.  
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil, stir and bake 15 minutes more.
  7. Serve immediately.
