I feel like Winter is never going to end.
We live in Minnesota and today it’s snowing…again!
It’s the middle of April and we are stuck inside our home.
We are trying our best to distract ourselves from the never ending snow accumulating outside but Mother Nature is making it difficult.
My kids are completely opposite on the idea of snow.
One loves it, the other hates it.
One loves sledding and snow forts and snow angels.
The other hates wearing shoes, coats and two layers of clothing.
They also hate gloves and hats too…so going outside is a frustrating ordeal.
However, as that child gets older, their tolerance of snow increases each year.
Because we live in Minnesota, we’ve been in what is deemed “Winter” for 6 months now.
We are fairly certain that the illustrious season called “Spring” will last for 2 days before Summer arrives.
Oh how I long for the day to not live somewhere where winter lasts for so long!
It’s because of this winter storm and the icy roads, that I’ve decided to share this Chicken Bacon Ranch Pizza with you!
I’ll start off by warning you I am on a pizza kick right now.
In the last few weeks we’ve made homemade pizza with an array of flavors multiple times.
I’ve been craving pizza lately and because it’s such an easy meal to recreate at home (and fairly cheap too!).
Because of this, we’ve been chowing down on it’s goodness!
This Chicken Bacon Ranch Pizza is no exception.
I say Chicken Bacon Ranch Pizza, however this pizza works great as Turkey Bacon Ranch Pizza as well!
I’m all for recipes that use up leftover rotisserie chicken as well as leftover turkey!
The real push for making so many pizzas lately has been leftover ham from Easter and some leftover rotisserie chicken.
I hate when we eat almost all the chicken and are left with just a tiny cup of it left.
A cup of shredded chicken is not very much and you certainly can’t create a casserole to feed the family with such a small portion of chicken.
You can however, add it to a pizza and suddenly that cup of chicken looks like a lot more than it really is!
Now in our house we love fresh Mozzarella cheese.
My husband turned me onto fresh sliced Mozzarella cheese years ago, and since then we always splurge and get it when making pizzas.
You of course do not need fresh sliced mozzarella for good pizza.
We love fresh Mozzarella because it adds more flavor to a pizza.

Chicken Bacon Ranch Pizza

This Chicken Bacon Ranch Pizza uses rotisserie chicken or leftover turkey! It's a quick and easy dinner idea that is kid friendly!
Ingredients
- 1 pizza crust (store bought or homemade
- 1 cup ranch dressing (not seasoning!)
- 1 1/2 cups Mozzarella cheese, shredded
- 8 strips of bacon, cooked & crumbled (or real bacon bits!)
- 1 cup chicken or turkey, cooked & shredded (Rotisserie chicken or leftover turkey work great!)
- 6 ounces sliced mozzarella cheese (or extra 1 cup shredded!)
- Spinach (optional)
- 1 teaspoon minced garlic (optional) Sprinkle this on top of bacon.
Instructions
- If using store bought pizza crust, preheat oven per crust instructions. If making from scratch, preheat oven to 400°F.
- Place store bought crust on pizza pan. If making your own, spray pizza pan with a light coating of cooking spray. Roll dough out on counter, and place on pizza pan.
- For both crust types, add ingredients now. Do not pre-bake pizza crust.
- Spread ranch dressing all over base of the crust.
- In this order, place these ingredients onto pizza: 1 ½ cup shredded Mozzarella cheese, turkey, crumbled bacon and sliced Mozzarella cheese
- Bake for 15-20 minutes or until crust is golden and toppings are melted.
