    • Chicken: I love using rotisserie chicken or canned chicken in recipes. It comes cooked and seasoned. Just one more thing that makes this Chicken Chili fast and simple to make. 
    • Salsa: What is the secret to making chicken chili flavorful and fast? It’s this salsa!
    • Toppings: The best way to top off this amazing and hearty chili is with some crunchy tortilla strips, sour cream & cheese. 

 

 

How to make Chicken Chili: 

It takes just a few minutes to start creating this amazing white bean chicken chili recipe. 

  1. Saute: It’s important to cook down the crunchier items in the soup to ensure your soup isn’t crunchy but creamy and delicious!
  2. Filling:  Once you have your veggies and seasonings cooked down it’s time to add the items that will fill your belly with goodness!  
  3. Serve: Once the soup is cooked and ready, serve immediately  and top with cheese sour cream and serve with tortilla strips. How easy was that! 

 

 

Can I make Chicken Chili in the Crock Pot? 

Absolutely! If you’re a return reader, you know that I love making recipes as easy as possible. If you’re here for the first time to check out this Chicken Chili recipe, now you know you can always return for the most efficient ways to create something delicious. 

To make this easy Chicken Chili in the crock pot: 

  • Shred your rotisserie chicken or add canned chicken and then toss it into the slow cooker.  
  • Add your beans, chicken broth, and salsa to the slow cooker with the chicken. 
  • Let it all come together on low for 3- 4 hours, or on low for 1 1/2- 3 hours. 

Pro Tip! To make sure the flavors are fabulous, you’ll still want to saute your onions just a bit before adding them to the crock pot — so the crock pot option still requires you to pull out your trusty pan! 

Wait there’s more! If you’re headed off to a potluck, having your Chicken Chili in a crock pot can be a lifesaver. You can always fully prepare the dish and set it to warm once you arrive, or keep it on low once you get there. Since we’re using Rotisserie chicken you don’t have to worry about the chicken cooking all the way through.

Something really fun to do to make your chili a little thicker is to take a fork and smash up the beans! Whether you need to relieve just a tad bit of stress or if you want to give your kids something fun to do with you during recipe prep, the best way to thicken up your white chicken chili is to smash up some beans. This keeps the broth protein-rich and doesn’t change the flavors. 

 

 

Personalize your Chicken Chili: 

Yet another reason Chili recipes are my favorite is because there is really no limit for what you can do to make the dish your own.  

  • If it is right after the holidays when you’re putting this together, go ahead and use leftover Turkey! 
  • Maybe you want to add black beans — go for it! If you’re adding black beans to your chicken chili, be sure to drain them fully or else they’ll change the color. 
  • Turn up the heat! You can definitely make this spicier by adding some green chilies or some diced jalapenos to the pot. 
  • Add some corn! This is one of my favorite things to add to my chili. Extra veggies for the win!

I can’t keep it a secret, my favorite thing about any kind of chili is the toppings! Some of my favorites are:

  • Sour Cream
  • More Cheese! 
  • Cilantro
  • Green Onions

How long does Chicken Chili last in the fridge?

Your chili can be kept refrigerated in an airtight container for up to 4-5 days. I love having this for leftovers; the comfort continues for days!

This recipe certainly freezes well. Just keep it in something airtight and it should be good to go in the freezer for up to 3 months.

Chicken Chili

This Chicken Chili is ready in one hour and uses either canned chicken or rotisserie chicken, making this a quick and delicious meal!

Cook Time 55 minutes
Total Time 1 hour

Ingredients

  • 1 medium yellow onion, diced
  • 1 Tablespoon olive oil
  • 2 (4 ounce) cans green chiles
  • 1/2 teaspoon oregano
  • 1 teaspoon garlic pepper
  • 1 teaspoon cumin
  • 3 (15.5 ounce) cans great northern beans, drained and rinsed.
  • 4 cups rotisserie chicken, shredded or 3 (12.5 ounce) cans of chunk chicken.
  • 2 (14 ounce) cans chicken broth
  • 1 (16 ounce) jar black bean salsa

Instructions

  1. Saute onion in olive oil until onion is cooked and translucent.
  2. Add green chiles, oregano, garlic pepper, and cumin. Mix well.
  3. Add beans, chicken, broth and salsa.
  4. Simmer for 45 minutes allowing flavors to meld.
  5. Serve with Monterey Jack Cheese, sour cream or tortilla strips.
