What is Creamed Corn Casserole? 

Corn Casserole is like a super moist cornbread packed with fresh corn kernels. This casserole has a “pudding” type consistency. Its creamy goodness can frequently be found on Southern tables as a delicious side dish. Some people call it “corn pudding,” I’ve also heard it referred to as “spoon bread.” This dish is made with creamed corn, butter, sour cream, and of course, Jiffy Cornbread Mix! It all comes together so quickly and disappears from your table even faster. It really is that good! 



Creamed Corn Casserole with Jiffy Mix Ingredients: 

  • Cream Corn: Naturally, one cannot make cream corn casserole without cream corn! This is the ultimate ingredient in this dish. 
  • Whole corn – Whole kernel corn in tandem with the cream corn makes for a delicious texture in this delightful casserole. 
  • Butter: Everything’s better with more butter! Here, the butter helps keep everything moist and rich. 
  • Sour cream: This helps keep the dish moist and delicious, while also adding a bit of a zesty flavor to help things from getting too sweet. 
  • Jiffy cornbread mix: This is the essential ingredient you’ll need to make delicious cream corn casserole. The little blue box helps keep things quick and easy. 
  • Sharp cheddar cheese: I recommend using sharp cheddar cheese because it has more flavor than mild cheddar cheese. Cheese is optional, however we love it with cheese!



How to make Creamed Corn Casserole: 

Step 1: Combine all wet ingredients. By combining your wet ingredients first, you’ll have fewer clumps and an evenly moist casserole.

Step 2: Add cornbread and cheese.  Once your wet ingredients are mixed, it’s time to add your cornbread then your cheese.  

Step 3: Bake & Serve.  It doesn’t take much effort to make this simple Southern dish.  Serve it hot with dinner!



Can you make Cream Corn Casserole ahead of time?

Absolutely! You can prepare this creamed corn casserole up to 48 hours in advance.  Just follow the steps in the recipe, but instead of baking, cover the casserole, and put it in the fridge overnight. 

Take the cream corn casserole out of the refrigerator and take off the cover. Bake and serve as directed.



Do I need to refrigerate any leftover Corn Casserole? 

Yes! Be sure to let the baking dish cool before covering it and storing it in the fridge. If you properly store your cream corn casserole in an airtight container, the leftovers will remain tasty for up to a week! 

Can you freeze a Corn Casserole? 

Yes, after baking, let the casserole cool to room temperature. Then cover it tightly and you can keep it in the freezer for up to 3 months. It might not have the same deliciously creamy texture as when served immediately, but it is doable! 



How do you reheat Jiffy Corn Casserole? 

  1. Reheat Creamed Corn Casserole from Frozen: If your casserole has been baked and frozen be sure to thaw the casserole in the refrigerator overnight. Once thawed, cover the dish with foil and bake until warmed through (about 20 – 25 minutes).
  2. Reheat Creamed Corn Casserole Leftovers: If you’re looking to reheat leftovers, I suggest using the microwave.  However you can also cook it in an air fryer or toaster oven which will provide a crispier top.



Can you cook Creamed Corn Casserole in a Crock Pot? 

Yes! To cook in the crock pot, assemble the ingredients for the corn casserole with jiffy mix in your crock pot and cook on high for 2 ½ hours or on low for 4 hours. If you’re taking this corn casserole to a potluck, taking it along in a slow cooker can be a great way to keep it warm and tasting fresh. Just be sure to keep an eye on your corn casserole in the crock pot so it doesn’t overcook and lose its delicious creamy moisture!

What if I add eggs to my Creamed Corn Casserole? 

Adding eggs will make your casserole a little lighter and fluffier, more cake like consistency.  Many recipes DO call for eggs. And it is delicious with eggs. But for this Creamed Corn Casserole recipe we leave the eggs out.

This creamed corn casserole makes the perfect side dish for any meal. With only 6 ingredients, this corn casserole will become a family favorite and repeat dish on your table!

  • 1/2 cup butter, melted
  • 1 can cream corn
  • 1 can whole corn, drained
  • 1 cup sour cream
  • 1 (8.5 ounce) cornbread mix
  • 1 cup shredded sharp cheddar cheese (optional)


  1. Preheat oven to 350*F
  2. Spray a 9x13 casserole dish with cooking spray and set aside.
  3. In a bowl mix butter, creamed corn, and sour cream. Mix well.
  4. Add dry corn bread mix and stir well.
  5. Add cheese and mix (if adding).
  6. Pour corn mixture into prepared pan and bake for 40 minutes or until firm and toothpick in center comes out clean.
  7. Serve immediately.
