So after discovering that my family enjoyed this easy soup recipe, we’ve played with it a bit and every time it comes out tasting great.  Though the original version – this version is our favorite!   

There’s no need for a long list of ingredients to complete this black bean soup from scratch. Simple and impressive are two of my favorite ways to describe a recipe. I promise this recipe is absolutely better than anything you could get store-bought. 

Soups are one of my favorite types of meals because you have everything simply tied together in front of you in one bowl. This black bean soup recipe is loaded with veggies and delicious flavors that you will definitely be going back for a second helping.

How to make this Black Bean Soup Recipe

Prepare to impress yourself with your ability to make this black bean soup from scratch in just five easy steps: 

  1. Cook your vegetables:  Pre cooking your vegetables a bit before they become soup will cut down your total boiling time!  And we’re all about saving time! 
  2. Soup time:  Add broth and black beans and cook.  This allows the flavors to meld and your vegetables to finish cooking!.
  3. Blend it: Now that everything is cooked through and soft, blend half your soup until smooth and creamy.  Then add to the remaining chunky soup. Blending a portion of your soup really gives it a power punch of flavor!  
  4. Add the fat: For this soup, we use bacon!  Really what soup doesn’t taste great with the addition of bacon?!
  5. Serve it up: Serve in bowls with a dollop of sour cream, lime wedge and even cilantro!

Customize your Black Bean Soup Recipe: 

While the ingredients listed above will combine to make an absolutely delicious black bean soup, you could always toss in a few extra ingredients to make this soup totally loaded with extra veggies. Here are some suggestions: 

  • Corn Kernels: If you use canned, which I’d recommend, be sure to drain before adding them into your soup. The corn will add a pop of color, but you don’t want to change the broth too much. 
  • Tomato Chunks: Again, adding diced tomatoes from a can is totally fine, and a fun punch of color! If you choose this, drain about 3/4 of the water from the can before adding the tomatoes to your easy black bean soup. 
  • Avocado – Fresh avocado diced on top adds a boost of healthy fats to your soup as well as flavor.
  • Green Onions – Slice up a few green onions to add on top for color and flavor.
  • Green Chiles – These chilies are not spicy but do add flavor and color.  I’m a fan of sneaking green chilies in a bunch of my dishes!
  • Smoked Paprika or Chili Powder – change up the flavors with a bit of a kick.
  • Queso Fresco Cheese – crumble a little on top and it will melt right into your soup.

 

 

How to store this Black Bean Soup Recipe:

You might have leftovers after making this soup recipe. If that’s the case, just store your extra in an airtight container and stick it in the fridge to have for later! The soup will last in the fridge for four to five days. 

 

 

Can you freeze this Black Bean Soup recipe?

Of course! Freezing this easy black bean soup is a great way to stock your freezer with something simple and delicious. Because the beans in the soup may continue to soak up some of the broth, be sure to leave a little room in the top of your airtight container before tossing it in the freezer. 

When you’re ready to eat, just take the black bean soup out and let it defrost in the fridge for 24 hours or overnight. 

I recommend reheating it over medium heat until it’s hot or nuking it in the microwave for an easy work lunch. Sometimes this black bean soup can thicken up when frozen if you notice this just use a bit of water or broth to thin it out. 

 

 

Is this black bean soup recipe gluten-free? 

Yes! Just one more reason this easy black bean soup recipe is amazing, it is safe to eat if you can’t have gluten, or if you’re feeding a group with sensitive stomachs. 

 

 

How long to soak black beans in this Black Bean Soup Recipe? 

This recipe uses canned beans for a quick soup option. However, If you’re wanting to go completely from scratch and use dried black beans for your soup, be aware that it is certainly going to take longer! That being said, you can add a lot of extra flavor to your soup by soaking and preparing dried beans to use for your soup. 

The day before you’re planning on making your soup, put your dried black beans in a large bowl and cover them in water. You want them fully submerged, with at least 4” of water covering them. Cover them and let them sit 8 hours to overnight.

The next morning, rinse your beans then fill a pot with clean beans and water.  Bring to a boil and cook for 1 – 2 hours until the beans are soft and tender. Then use it in soup as directed instead of canned black beans.

This easy black bean soup recipe is a family favorite. Perfect for lunch or dinner, it also freezes well for a future date. Packed with protein, vegetables and fiber you can't go wrong!

Cook Time 1 hour 5 minutes
Total Time 1 hour 20 minutes

Ingredients

  • 1 Tablespoon olive oil
  • 1 cup red onion, diced
  • 1 cup celery, chopped into bite sized pieces
  • 1 cup carrot, chopped
  • 1 teaspoon oregano
  • 5 cloves garlic, minced
  • 32 ounces chicken broth
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1/2 pound bacon, cooked & chopped
  • pinch of parsley
  • sour cream (optional)
  • cilantro (optional)
  • Limes

Instructions

  1. Heat oil in a large pot (dutch oven) and cook onion, celery & carrots for 5 minutes or until tender. 
  2. Add oregano, and garlic and cook 1 more minute.
  3. Add broth and rinsed black beans.  Place lid on pot and cook for 45 minutes.  
  4. Remove half bean soup and blend in a blender until smooth.  Add blended soup back into pot. 
  5. Add bacon and parsley.  Cook 5 more minutes.  
  6. Serve in bowls with a dollop of sour cream, cilantro and limes if desired.
