Yes, you can freeze this creamy soup recipe. 

However the melted cream cheese may separate in the freezer. When you reheat, be sure to mix really well. 

Even then you may notice the texture isn’t quite what it was before you froze it. Though the flavor will still be great.

Another option is to prepare the rest of the soup, leaving out the cream cheese.

Then freeze it and when you want to eat it, take it out and heat it all up with the cream cheese.

That way it can be ready to go whenever you need it.

Always be sure to store in an airtight container for best results.

Frozen, it’ll stay good for up to three months.

It’s time for some creamy comfort called Chicken Soup with Cream Cheese! It’s perfectly rich, hearty, and a treat for cooler evenings!

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes

Instructions

  1. In a large pot, saute onion in the butter.
  2. Once onions are translucent and cooked through, add chicken broth, carrots, potatoes and chicken.
  3. Bring to a boil, put lid on pot and lower temperature to a simmer. Simmer for 15 minutes.
  4. Add parsley, salt, pepper and corn. Mix well. If adding bacon, add it here.
  5. In a separate bowl blend cream cheese with hand mixer. Add 1/2 cup of soup broth to cream cheese mixture a little at a time, blending after each addition. This will help cream cheese from curdling and turn your cream cheese into a liquid mixture.
  6. Add cream cheese mixture to soup, stir.
  7. In same cream cheese bowl, add flour and milk 1/4 cup at a time until well blended. Add this to soup.
  8. Serve immediately.
  9. Bring to a boil and boil for 2 minutes until mixture thickens slightly.
