Apple Pie Empanadas
These Apple Pie Empanadas are a delicious dessert made with sweet apple pie filling and a cinnamon sugar topping. Perfect for any occasion!

- Preheat oven to 375℉.
- For these empanadas, I like to cut the dough into 16 portions. So, cut the dough ball in half, and cut each half into quarters, and then cut each quarter in half again. This makes them a little smaller which I think is better for a dessert.
- Add about two slices of apple to the bottom half of the dough circle. These are small so it is very important that they are not overfilled.
- Fold the top half over and pinch the edges.
- Holding the empanada in one hand, use the other to pinch the edges upward. After the first pinch, move your fingers over and make the second pinch. The pinches should start to form a uniform pattern on the edges.
- Lay out the empanadas on a parchment covered baking sheet.
- Brush the tops with the beaten egg.
- Mix together the cinnamon and sugar.
- Sprinkle each empanada with the cinnamon sugar mixture.
- Bake for 24-26 minutes.
