One of the biggest weaknesses my family has is Rice Krispie Treats.  From the moment they are cool enough to touch, they are disappearing.  Every family has that one special treat they love and Rice Krispie Treats are one of ours.  We don’t agree on everything food related, but we do agree on this!  

We’ve done a few versions of Rice Kirspie Treats on Num’s the Word and these Oreo Rice Krispie Treats is our newest obsession.  Also called Cookies & Cream Rice Krispie Treats, these are inhaled by my kids.

What isn’t there to love.  Oreos and Rice Krispies cereal all stuck together with marshmallows.  I dare say it’s a match made in heaven!

I also love that if I simply switch out the butter with unflavored coconut oil, these are suddenly vegan!  Which is perfect for us as my Parents are vegan and we are always trying to come up with easy and tasty recipes that everyone, vegan or not, will love.  

Speaking of vegan, did you know that Oreos are vegan?  It’s true.  One of the best cookies ever created just happens to also be vegan.

We are huge fans of this Oreo Rice Krispie Treats Recipe.  So much so that we make them for Christmas can call them Lumps of Coal Oreo Rice Krispie Treats!  A fun little joke on that one person who has been naughty all year!

HOW DO YOU MAKE RICE KRIPIE TREATS?

Rice Krispie Treats in any form is a simple 3 ingredient dessert.  Butter, marshmallows and Rice Krispies.  From there you can manipulate the recipe into what you want it to be.  Switch out the Rice Krispies for another cereal.  You could add your favorite candy, cookie or even sprinkles to the mix for a new twist. Or you can add in a flavoring such as vanilla, peppermint, or any extract.  I have friends who swear by adding a drop of vanilla to their Rice Krispies. 

Once you have all your ingredients collected, you’ll melt your butter and marshmallows together either in the microwave or on the stove.  Once melted and well mixed, pour this mixture over your Rice Krispies.  Then add in any extra bits now and then mix.  Gently press your mixture into a pan and let cool.  Once cool, slice and eat.  Whatever you do not eat, wrap in plastic wrap or store in an air tight container.  

These Oreo Marshmallow Rice Krispies have butter, marshmallows, Oreos and rice krispies cereal.  Making these a 4 ingredient treat!

WHY DO MY RICE KRISPIES GET HARD?

One of the main ingredients in marshmallows is sugar.  Sugar when over heated will become hard and brittle.  So the trick to soft Rice Krispies is to cook your marshmallow and butter mixture on low, nice and slow.  If the sugar heats up too fast or is cooked for too long, your marshmallow mixture will become hard when it dries.  Personally I like to cook my marshmallow and butter mixture until the marshmallows are 90% melted.  Then remove the pan from the microwave or stove and stir until all are melted.  This keeps the sugar in the marshmallows from overheating and becoming hard.

Another reason they get hard is because you leave them out.  Air will dry out your treats too, so make sure to store them properly when not eating.  Just like traditional cereal treats, these Oreo Cookie Rice Krispie Squares will also dry out if you leave them out for too long.

HOW DO YOU KEEP RICE KRISPIE TREATS FRESH?

I find the best way to keep them fresh is to wrap each individual square with plastic wrap.  That however can get time consuming and be a nuisance.  Other methods are to wrap the unused portion in plastic wrap or to store them in air tight containers or zipper plastic bags.  Make sure to remove as much air from the bag as possible before sealing.

If storing in a large container that requires you to stack these Oreo Treats like Rice Krispies on top of each other, make sure to place a layer of wax paper or non-stick foil between the layers.  If you don’t do this then your Rice Krispies may stick to each other.

HOW DO YOU KEEP RICE KRISPIE TREATS FROM STICKING TO THE BOWL?

I have to give my husband credit for this one!  Before you pour your Rice Krispies into the mixing bowl, spray your bowl with cooking spray.  This will make the mixing process and removal of the Rice Krispies from your bowl easier.  Don’t worry about it making your Rice Krispie Treats too oily.  They’ll be fine and it wont change the flavor a all.

HOW DO YOU KEEP RICE KRISPIE TREATS FROM STICKING TO THE PAN?

If you have a problem with Rice Krispies sticking to your pan then that is an annoying problem! To fix that, you’ll want to either spray your pan with cooking spray or wipe it down with butter.  Make sure to get the corners and all the way up the sides of the pan.  If you don’t feel comfortable with that method, then I suggest investing in non-stick foil.  I’ve found it to be a miracle worker when dealing with sticky foods.  In fact I use it every time I make caramels!  So it’s well tested and trusted in my home.

DO RICE KRISPIE TREATS NEED TO BE REFRIGERATED?

Nope! This Rice Krispie Treats recipe can be kept at room temperature.  You can refrigerate them if you wish, but that will firm them up.  However you can confidently leave them out on the counter at room temperature if stored appropriately (see above).

HOW DO YOU FIX HARD RICE KRISPIE TREATS?

Unfortunately Rice Krispie treats do not last long enough in this house for them to dry out.  However one trick that we use on hard dried out cookies is to put a piece of bread in with them.  For some reason bread will soften most things up if left long enough.

It’s why I keep a piece of bread in my brown sugar – to keep it soft!  If you are worried about bread crumbs touching your Rice Krispie treats, place a layer of wax paper or non stick foil between the bread slice and Rice Krispies.  It usually takes 12 – 24 hours for the item to get to a nice chewy consistency again.  

I will warn you though, I myself have never tried this method with Rice Krispie Treats.  So if you do, let me know how it turns out!

Oreo Rice Krispie Treats are a tasty spin on the classic treat! These Cookies & Cream Rice Krispies are a fun twist on your favorite treat! 15 Minutes or less to make!

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 4 Tablespoons butter
  • 1 (10 ounce) bag of marshmallows
  • 6 cups of Rice Krispies cereal
  • 8 Oreos, chopped up

Instructions

  1. Butter a 9x13 inch pan (or spray with cookie spray)
  2. Add 6 cups of Rice Krispie Cereal into a large bowl.
  3. In a microwave safe bowl or medium sized sauce pan, combine butter and marshmallows.
  4. If using microwave, cook marshmallows for 30 seconds. Remove and stir. Continue cooking at 30 second intervals until marshmallows are almost melted. When 90% melted, just stir until fully melted so you don't overcook the marshmallows.
  5. If using stove top, cook on low until marshmallows and butter are melted and blended together.
  6. Once marshmallows are fully melted, pour onto cereal.
  7. Place chopped up Oreos into bowl on top of melted marshmallows.
  8. Mix cereal, marshmallows and Oreos together until nice and gooey. Pour this mixture into prepared dish.
  9. Press marshmallow treats into edges of pan. If too sticky, place a little butter on hands and press down cereal treats.
  10. Once cool, cut and serve!

Notes

If you don't like them so sticky, add 1-2 cups of rice krispies to mix.
