Instructions

  1. In a large soup pot add chicken broth, salt and canned pumpkin.  Mix well.
  2. Add onion, thyme and garlic. Mix well.
  3. Bring to a boil and simmer for 30 minutes uncovered.
  4. Using an immersion blender, blend soup until nice and creamy.  If you do not have an immersion blender, transfer soup to a high speed blender and blend.
  5. Transfer soup back to pot (if moved) and simmer 30 minutes longer
  6. Stir in heavy cream and serve immediately.

This soup is delicious. I added 1T dried cilantro (because i did not have any fresh on hand), and 1/2t cumin to give it a more “Mexican” flair. Very happy with the results. Will make again!
