If you are a fan of Pumpkin, then you’ll be sure to like these Pumpkin Cupcakes with Pumpkin Spice Buttercream Frosting.

I’ve tested this recipe on hundreds of people and so far the main feedback, aside from them being delicious, is that the pumpkin flavor is perfect.

Not too strong, not too weak.

Just the right mix of pumpkin.

The frosting is the perfect compliment to the cupcakes with its velvety Pumpkin Spice Buttercream.

Cupcakes are one of the few foods I am quite comfortable making and experimenting with.

I have a base cupcake recipe that I like to manipulate to give me different flavored results.

And thus far, it’s always turned out for me.

So how on earth do I get hundreds of people to try these cupcakes?

And who on earth has time to make that many cupcakes?

My daughter runs a Cupcake and Lemonade Stand in front of our house weekly during the summer.

She offers a unique gourmet flavored cupcake every week as well as fresh squeezed homemade lemonade.

Over the last 3 years she’s gained quite the following and it is not unheard of for her to sell between 70 – 100 cupcakes a week as well as a few gallons of lemonade.

All the money she makes goes into a college fund, of which she’s not allowed to touch.

Because of our fabulous customers, who visit us weekly, we’ve also been asked to provide cupcakes for a few special events.

This past summer, we did 2 weddings.

Both weddings requested 250 cupcakes.

We allow our customers to choose 1 flavor for every 50 cupcakes.

One of the two weddings requested these Pumpkin Cupcakes as it was an Autumn wedding.

Take the wedding guests, our weekly customers and many of the teachers at my daughters school and you’ve got yourself a nice sample size to recipe test on.

Ok, to be honest, we only recipe tested on our regular customers.

The teachers and wedding guests all got the final perfected cupcake.

Which is of course this one.

These cupcakes start with a box mix, and turn into moist, bakery style cupcakes that people go nuts for.

We topped ours with either candy pumpkins or with Pumpkin shaped Pie Crust Cookies.

Pumpkin Cupcakes

  • Cupcakes:
  • ----------------------
  • 1 (16 - 18 ounce) box of white cake mix
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 3/4 teaspoon salt
  • 1 1/3 cup water
  • 2 Tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 2 teaspoons pumpkin spice
  • 2 large eggs
  • ----------------------
  • Pumpkin Spice Butter Cream Frosting:
  • ----------------------
  • 1 cup of butter, room temperature
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin spice
  • 2 Tablespoons heavy whipping cream


Pumpkin Cupcakes:
Preheat oven to 325*F
Line cupcake pan with liners and set aside.
Using a stand mixer or hand mixer, combine cake mix, flour, sugar and salt. Mix to incorporate.
Add water, oil, vanilla, pumpkin puree, pumpkin spice, and eggs. Mix well until mixture is smooth.
Using a large cookie scoop, fill each liner 3/4 full with cake batter.
Bake for 16 - 18 minutes or until toothpick inserted into center comes out clean.
While cupcakes are cooling, make Pumpkin Spice Buttercream Frosting and set aside.
Pipe frosting and any decorations you want onto cupcake and promptly devour 2.
Pumpkin Spice Buttercream Frosting:
Using a stand or hand mixer, blend butter until smooth & creamy.
Add powdered sugar 1/2 cup at a time until fully incorporated.
Add vanilla and pumpkin spice. Mix well.
Add heavy whipping cream and blend well until fully mixed in.
Fill pipping bag and pipe onto cake or cupcakes.

These look amazing! If I were to make these 1 or 2 days ahead, can you let me know the best way to store to keep them fresh/moist (without sweating on top)? Thanks!

These cupcakes are so yummy and delicious! My family loves these and were gobbled up! Can't wait to make these again!
