Oh man…I am so excited. I am participating in a “Chicken Challenge” to create a tasty recipe using chicken.
Sounds pretty easy right? Usually it is, but when the pressure is on, I get all nervous.
Our last recipe challenge was a Lemon Challenge where I made a No Bake Lemon Cheesecake.
This time it’s all about Chicken! And it being winter here I was in need of a taste bud vacation! I decided to make this Pressure Cooker Polynesian Chicken Sandwich!

Need a tropical vacation but can’t leave home? Try this Pressure Cooker Polynesian Chicken Sandwich!
Peaches and Pineapple make up the tropical flavors in this dish as well as a thick slice of grilled pineapple placed right on top.
Don’t have time to slave all day over a stove, this Polynesian Chicken Sandwich is ready in 20 minutes. Seriously. Toss it in the Pressure Cooker, set the table and serve.
I am a HUGE fan of my new Instant Pot Pressure Cooker. My parents gave one to me for Christmas and I use it quite regularly. I’ve learned I can take any crock pot meal and easily convert it to a pressure cooker.
I’ve also learned any baked or stove top dish can easily be converted into a pressure cooker meal.
Think about it…Summer time….no more hot ovens or stoves. Just use your Pressure Cooker. Plus this Polynesian Chicken Sandwich makes a great picnic dish.
Whip is up in minutes, then package the buns, pineapple and chicken in separate containers and assemble when you get to your grassy island!
I see this as a win-win. Tasty meal, great date night or family night and a happy full family.
I digress with all this “I love my Pressure Cooker” talk…This Polynesian Chicken Sandwich was as tasty as it looks. A sweet and tangy chicken topped with pineapple makes an irresistible meal.
And as always, any good meal must also be good in left-over form.

Pressure Cooker Polynesian Chicken Sandwich
This Pressure Cooker Polynesian Chicken Sandwich recipe takes 20 minutes to make and will become a family favorite!
Ingredients
- 6 boneless, skinless chicken breasts
- 1 (12 ounce) can frozen orange juice concentrate
- 2 Tablespoons lemon juice
- 1 teaspoon soy sauce
- 1 (15.25 ounce) can peaches, with juice
- 1 (20 ounce) can pineapple chunks, with juice
- 1/4 cup light brown sugar
- 1 Tablespoon corn starch
- Hamburger Buns
- Fresh sliced pineapple, grilled
Instructions
- Note: I recommend topping your sandwich with a thick slice of grilled pineapple. You can do this with a stove top grill pan or on the grill. I like to cook mine while my food is cooking in the pressure cooker.
- In a bowl mix orange juice concentrate, lemon juice, soy sauce, peaches, pineapple chunks & brown sugar.
- Pour 1/2 mixture into pressure cooker.
- Place chicken breasts on top of sauce.
- Pour remaining sauce over chicken.
- Lock lid into place.
- Press Pressure Cooker Feature (if using Instant Pot)
- Cook for 12 minutes with pressure valve closed.
- When pot is finished, carefully open pressure valve and allow pressure to release.
- Once pressure has been released, open pot, remove chicken and shred.
- Strain juice from pressure cooker into a pot.
- Remove one Tablespoon of juice and put into a small bowl.
- Add 1 Tablespoon of cornstarch and mix well.
- Add cornstarch mixture to juice.
- Cook over medium heat until juice mixture thickens.
- Pour over shredded chicken, toss to coat.
- Place 1/4 cup of shredded chicken mixture onto a hamburger bun.
- Top with grilled pineapple slice and devour.

Can't wait to try this recipe! Love pineapples in my food. I have a quick question - can I use frozen chicken breasts and cook directly in the pot?

Sally I've not tried with frozen. I'd add extra time for frozen. And if the sauce isn't as thick as you want, add a little extra corn starch and water mixture so it's a good saucy consistency! I hope you like!
