As a huge fan of no bake cheesecake, I am here to tell you that you’ve got to try this No Bake Lemon Cheesecake!
It’s a power punch of tasty lemon mixed with the creaminess of cheesecake!
Years ago, my husband and I were talking about no bake cheesecake.
We are huge fans.
My husband then challenged me to find a really good no bake cheesecake recipe.
We wanted a recipe that wasn’t complicated, could be whipped up in a hurry and chilled to a perfect cutting consistency.
Is that asking too much?
We’ve found that there is nothing worse than a melting cheesecake or oozing cheesecake that isn’t presentable.
However luck wasn’t on our side immediately.
After trying a few different recipes and being disappointed, I finally created what we thought was the perfect no bake cheesecake!
Our favorite recipe is simple to make, doesn’t take a lot of ingredients and has a hint a hint of lemon in it.
We really enjoyed the flavor with the mild lemon because it went well with the various fruits we’d top our cheesecake with.
This basic no bake cheesecake recipe suddenly became our go to recipe.
While talking with a few of my fellow foodie friends and we decided to work together on a lemon round up.
We would all create a recipe with lemon in it that wasn’t already on our sites, and link to each others recipe {See bottom of recipe}.
I knew right then that I wanted to make my no bake cheesecake but wanted a more powerful lemon flavor.
So today I bring you this No Bake Lemon Cheesecake.
It’s my favorite no bake cheesecake topped with my favorite lemon curd which makes it a lemon lovers dream come true.
However, I must warn you that the lemon flavor is NOT subtle.
It’s incredible without being overwhelming.
If you have not yet tried my lemon curd then you are really missing out.
Generally speaking, the first question I’m asked by those who have never had lemon curd is: What do you do with it?
Aside from eating it with a spoon, we also love to add it to a variety of treats!

However I will warn you.
Homemade Lemon Curd is ADDICTING.
The store bought lemon curd is off tasting, disappointing and also expensive for the small amount you get.
So if you are going to go to the trouble of making this cheesecake, then do it right and make the lemon curd topping too!
This creamy cheesecake, topped with lemon curd is literally to die for because you’ll eat a minimum of two slices right away!
My kids go nuts for this cheesecake.
Instead of cake, my kids now lean towards homemade cheesecakes.
Sometimes baked, and other times not.
Either way, this No Bake Lemon Cheesecake is quick, easy and packed with flavor!

No Bake Lemon Cheesecake
No Bake Lemon Cheesecake has become my kids favorite treat! A tasty no bake cheesecake topped with homemade lemon curd. Quick, easy and perfect for any party or gathering, this is a lemon lover's ideal cheesecake!
Ingredients
- 2 (8 ounce) cream cheese, room temperature
- 1 (14 ounce) can of Sweetened Condensed Milk
- 1/3 cup lemon juice (fresh squeezed tastes best, but you can use store bought)
- 1 teaspoon vanilla extract
- Graham Cracker Crust (homemade or store bought)
- 1 batch of cooled lemon curd
- Homemade Whipped Cream {or cool whip}
Instructions
- In a bowl blend cream cheese & sweetened condensed milk until creamy and smooth.
- Add lemon juice and vanilla and blend well. Mixture should thicken.
- Pour mixture into a prepared graham cracker crust.
- Top with 1/2 - 3/4 of lemon curd mixture
- Chill for 2 hours or overnight. Personally we found it slices best if frozen for 2 hours - overnight. Refrigerated pie is soft, pie from freezer slices perfectly as shown in photo. Pie doesn't actually freeze or need to be thawed.
- Slice and enjoy with a scoop of homemade whipped cream.

Well i just made this for a friend's birthday and it looks really pretty. I tasted each layer while putting it together and they were all very flavorful.I can't wait until the birthday party tonight. Thanks great idea and curd is not as hard to make as I imagined .

Janelle, I was looking for an easy lemon cheesecake. I came across several online but I’m so glad I found yours! I didn’t have any lemons this time so I made it without the zest but my husband asked for seconds and my six kiddos all LOVED it! I’m going to make it again next month when family visits!
