Crock Pot Peach Cobbler

Once upon a time, my mother came to visit me and brought LOTS of peaches from her peach tree.

As in 15 gallons of peaches!

We gave these peaches to all of our neighbors and friends and when all was said and done, pealed, sliced and froze the rest (about 10 gallons worth).

I am sure you can just imagine what my freezer looked like when we were done.

So I decided one day to whip up a crock pot peach cobbler using these deliciously ripe and perfectly sweet peaches.

My husband kept telling me that it wouldn’t turn out. That the topping would never cook properly and set.

Boy was he wrong.

The topping turned out perfect.

Not as pretty as it would have been if I had made it in the oven, but cooked through and DELICIOUS.

Super delicious.

So when I went to offer my doubting husband a bowl of this amazing peach cobbler, you know what he said to me?

“No thanks, I don’t like peaches.”

GASP!

I have known my husband for 11 years.

And in that 11 years I never thought twice about whether he ate peaches.

I have made countless crisps and pies, and ice creams and other tasty treats and never once did the topic of him liking peaches ever come up.

Now before you think I’m crazy, let me clarify.

My husband does not eat sweets.

He might eat ONE cookie or nibble on a bar.

But has never sat down and eaten an entire sleeve of Oreos or binged on ice cream.

So him not eating a dessert I make is not unusual (which is where good neighbors who accept tasty treats comes in).

So in these past 11 years  I have somehow not figured out that he NEVER ate peaches.

Talk about not knowing someone!

I digress, sorry.

Anyway, he had to take my word for it and my word is that this recipe is delicious and a keeper.

And perfect to use with frozen peaches!

Crock Pot Peach Cobbler

Crock Pot Peach Cobbler

Ingredients

  • 8 fresh peaches, pealed, sliced and cut into pieces (or 8 cups of frozen peaches, thawed)
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • --------------------
  • 1 cup flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 Tablespoons butter, cut into small pieces
  • 1/4 cup boiling water
  • --------------------
  • 3 Tablespoons white sugar
  • 1 teaspoon ground cinnamon

Instructions

In crock pot combine first seven ingredients: peaches, 1/4 cup white sugar, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Mix until incorporated.
In a large bowl combine second five ingredients: flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder and salt.
Using a pastry blender or your fingers, mix in butter.
Once everything is well incorporated, add hot water until just combined.
Drop dough mixture by the spoonful on top of peach mixture.
In a small bowl combine 3 Tablespoons white sugar and 1 teaspoon cinnamon.
Sprinkle over the top of the dough mixture.
Cook on low for 8 hours or until dough is cooked through.
