Mango & Sweet Pork Tacos

Mango & Sweet Pork Tacos are when two absolutely delicious items collide and create a perfect and delicious new item.

Our world is made up of collisions like this. 

Just think about Peanut Butter & Jelly or Apples & Pie.

How about Carrots & Ranch or Pasta & Red Sauce.

All items by themselves are delicious. 

However when you combine them, you have an irresistible and delicious new item that will quickly become a favorite.

That is the way these Mango & Sweet Pork Tacos are.

Some might find putting Mango Salsa on Pulled Pork to be absurd.

Others might go a step further and say that Mangoes do not go with any kind of meat. 

I however 100% disagree.  We’ve tried this amazing Mango Salsa with a variety of meats and so far, I’ve enjoyed them all! 

For us, this recipe was a creation of a way to use up some of our favorite Cafe Rio Style Sweet Pork. 

We’ve come up with a slew of ways to use up the sweet pork of which some are already on the site and others coming in the future.

However these Mango & Sweet Pork Tacos were amazing. 

They are also VERY quick to toss together if you are using leftover Sweet Pork from another meal. 

However if you are making the Sweet Pork just for these, then good.  Because they are worth it. 

However same some for a few of our other recipes too!

If you’ve never tried Mango Salsa on a taco, then I recommend starting today.

I’m fairly certain, we’ll have you hooked and looking for more ways to enjoy it aside from the traditional tortilla chip!

 

Yield: 1 Dozen or More Tacos

Mango & Sweet Pork Tacos

Mango & Sweet Pork Tacos
Cook Time 6 hours 10 minutes

Ingredients

Instructions

On a single flour tortilla, scoop a 1/3 cup of sweet pork into the middle.
Scoop several large Tablespoons of Mango salsa on top of sweet pork.
Fold up and devour.
Repeat.
