One Pot Mexican Taco Filling

This One Pot Mexican Taco Filling takes 30 minute to put together and will stick to your ribs! This makes a perfect week night meal, great for company and reheats well! Use it for Tacos, Burritos, Stuffed Bell Peppers or a burrito bowl!

Are you familiar with one pot meals?

I love them!

There are fewer dishes to wash, making them easy meals that cook up quickly.

This One Pot Mexican Taco Filling is PERFECT for weeknights or for when company is coming and you have a large group to feed.

Another way to serve this is to take it to a potluck, picnic or even serve at a taco bar!

However, don’t let the title fool you.

This isn’t a filling just for tacos, but you can just as easily create a burrito too!

So here are a few thoughts with this dish.

There are three ways that we’ve come to love this dish.

1) Tacos – obviously!!  Yum Yum.  Put this filling in a hard or soft shell, top with your favorite toppings and call it Nummy!

2) By itself {especially good for leftovers!}. Sprinkle a little cheese, salsa and sour cream on top and you have a taco bowl!

3) Stuffed in a bell pepper!  Num Num!  Scoop out the seeds of the pepper then boil or bake it until it is tender.  Then salt your pepper, stuff some cheese on the bottom of the pepper, then stuff with warm filling and top with more cheese, green onions and sour cream!

This One Pot Mexican Taco Filling is hearty, delicious and reheats well.

It comes together quickly and is something that our family has really enjoyed.

If you are short on time but need a tasty meal, then I suggest trying this One Pot Mexican Taco Filling!

One Pot Mexican Taco Filling

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup yellow onion
  • 2 teaspoons diced garlic
  • 1 package taco seasoning or 2 Tablespoons of homemade Taco Seasoning
  • 2 Tablespoons of vegetable oil
  • 1 1/2 cups uncooked Jasmine rice
  • 2 cans of chicken broth
  • 1 (14.5 ounce) Jar of salsa {any, pick your favorite}
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed.
  • 1 package tortillas {we prefer flour}
  • Cheddar Cheese {optional topping}
  • 1 avocado, peeled and diced {optional topping}
  • Green Onion, diced {optional topping}
  • Cilantro, diced {optional topping}
  • Roma Tomato, diced {optional topping}

Instructions

In a large pot, add ground beef, onion, garlic and taco seasoning. Cook until ground beef is cooked through and onion is translucent.
Push ground beef mixture to the side of the pot and add 2 Tablespoons of oil and uncooked rice. Fry rice until it begins to golden.
Add chicken broth to the ground beef and rice mixture.
Add salsa, corn and black beans. Bring to a boil.
Put lid on pot and lower temperature to low and cook for 20 minutes or until rice is cooked through and liquids are absorbed.
Serve immediately. Fill tortilla with rice mixture and top with optional toppings
