Of all the pickiness of my children, the one that really baffles me is their dislike for potatoes. Particularly mashed potatoes.
Both my husband and I remember that being one of the best parts of holidays when we were kids. Whatever weird salads our moms would add to the menu, we knew there was going to be mashed potatoes and gravy, so everything was great!
And all three of our kids don’t like them at all. They never have and I’m really worried they never will. Because that would just be really sad for them.
So, because we didn’t have to worry about their sensitive taste buds, this year we decided to try something new that we would like. Garlic mashed potatoes are great, so I thought, why not caramelized onions?
They turned out great and of course were creamy and delicious and filled with flavor. So, if you like caramelized onions you should definitely give these potatoes a try!
Caramelized Onion Mashed Potatoes
Ingredients
- 8 medium russet potatoes, peeled and chopped into 1 inch pieces
- 2 large onions, chopped
- 6 tablespoons butter
- 1/2 cup sour cream
Instructions
Place 2 tablespoons of butter and chopped onions in large skillet over medium-low heat. Cook slowly, stirring occasionally until golden in color and fragrant.
Add quartered potatoes to a large pot filled with salted water. Bring to a boil, then cover and turn to low. Cook until fork-tender, about 10 minutes.
Drain potatoes and add to large bowl with sour cream, onions and the rest of the butter.
Mash with potato masher or with an electric mixer until desired consistency is reached.

These are wonderful potatoes they were a hit at our dinner party. My hubby really likes them especially when I pair them up with your Easy Salisbury Steak Casserole, He is quite the fan. Thanks for sharing both recipes. :)
