Baked Eggs with Tomatoes and Lentils

INGREDIENTS:

Eggs

Plain Greek Yogurt

Oil

Spinach

Black Pepper

Vegetable Broth

Diced Tomatoes

Goat Cheese

Shallot

Leeks

Lentils

Step 1

Cook shallot and leeks until softened.

Step 2

Add broth, tomatoes, and pepper and bring to a simmer.

Step 3

Add  lentils & simmer uncovered until cooked through.

Step 4

Stir in spinach and cook until wilted.

Step 5

Create a well and crack an egg into each well.

Step 6

Bake in a preheated oven until eggs are cooked through.

Step 7

Make whipped goat cheese and serve on top of baked eggs and lentils.
