It’s best to make this fantastic bruschetta the same day you plan to eat it.

Especially because of the strawberries, which can get soggy. 

Well the bread gets soggy I guess because of the yogurt.

So… yeah. No one wants a soggy baguette!

You could prepare the ingredients separately. 

Like cut the strawberries and have them ready to go and things.

Then assemble them just before serving to save time.

How Long Does Fruit Bruschetta Last?

Cream bruschetta’s are best enjoyed immediately after assembly.

That way you get the freshest taste and best texture. 

If you must store it, do so in the refrigerator for a few hours, though the bread may soften.

I don’t recommend freezing fruit bruschetta. 

All the flavors and textures that you love? They’re all best enjoyed immediately. 

Freezing would totally change the quality of the bread.

Not to mention the freshness of the fruit.

Once thawed they tend to be pretty mushy and not so great.

Instructions

  1. Slice baguette into 1 inch pieces. Lay flat on a cookie sheet and lightly butter the top of each baguette.
  2. Place baguettes in the oven and turn the oven on to Broil Hi
  3. Broil baguettes for 1-3 minutes. WATCH closely as it will go from lightly toasted to burnt in seconds. Remove from oven.
  4. After baguettes cool to room temperature, smear Greek yogurt over one side of baguette pieces.
  5. In a medium bowl, mix together strawberries, blueberries, spinach & poppy seed dressing.
  6. Spoon 1 - 2 Tablespoons of mixture on to each baguette.
  7. Serve immediately.
