Microwave Caramel Corn is officially your new favorite go to caramel corn.

One of my greatest weaknesses in life is caramel corn.

I cannot resist caramel corn.

Now if we are being honest, my biggest weakness is gooey caramel corn.

Holy Guacamole I can feel a cavity coming on right now just thinking about it.

However, the norm, in terms of caramel corn, is crunchy caramel corn.

It’s also the preference of my husband too.

Because of this, every year I make stove top caramel corn and bake it and of course sneak a few pieces every time I stir it because I just can’t wait.

A while ago I was introduced to microwave caramel corn, and now my whole world has changed.

Microwave Caramel Corn takes less than 10 minutes to make, requires ZERO baking and tastes great.

It’s also crunchy.

Now that is my kind of caramel corn!

This is the “hurry and make popcorn” for movie night kind of caramel corn.

This microwave caramel corn has been on my radar for some time.

However my microwave can’t be used and so I had to wait (and remember) to make it at my in-laws.

My microwave is a mini version of a microwave called a half pint and is no longer sold in stores.

It was small, didn’t take up a ton of counter space and you could still fit a dinner plate inside.

A dinner plate yes, a grocery store brown paper bag, no.

So once I finally remembered to make this, I headed over to my in-laws, stole their kitchen (not unusual) and made gobs of popcorn.

Recipes take tasting and testing and, really, it’s a tough job, but someone has to do it.

I’m glad I have them on my side to always tell me their honest opinions about everything I make and then to brain storm with on how to improve it.

This Microwave Caramel Corn turned out to be simple, easy and delicious.

Just make sure that your brown paper bag doesn’t have any holes in the bottom before you start, or you’ll have a sticky mess to deal with!

 

Yield: 4 Quarts Popcorn

Microwave Caramel Popcorn

Microwave Caramel Corn is crunchy, simple and requires ZERO baking. Ready in 10 minutes and tastes amazing! Your new favorite popcorn!

Cook Time 8 minutes
Inactive Time 2 minutes
Total Time 10 minutes

Ingredients

  • 2 bags white popcorn
  • 1/2 cup salted butter
  • 1/4 cup light corn syrup
  • 1 cup light brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon baking soda
  • 1 grocery store brown paper bag

Instructions

  1. Pop popcorn, remove seeds and place in a large store sized paper bag. Set aside.
  2. In a microwave safe bowl, add butter, corn syrup, brown sugar and salt.
  3. Microwave on high for 2 minutes. Stir.
  4. Microwave on high for 4 minutes. Stir.
  5. Add vanilla and baking soda and stir well.
  6. Pour over popcorn in brown paper bag. Roll shut and shake well.
  7. Place paper bag with popcorn in it into the microwave and cook on high for 1 1/2 minutes.
  8. Remove from microwave and shake well.
  9. Pour onto a jelly roll cookie sheet and spread out. Allow to cool and eat immediately!

Would this recipe be suitable to cool and bag in cellophane food bags for gift giving or does it need to be eaten immediately? Thank you! Love your blog.

I would suggest putting the Carmel corn in large bowl after shaking it then microwave. I put bag in microwave with popcorn and it started on fire.

Hi Linda! I've never heard of a bag catching fire. I suggest just rolling the bag tightly. If you do a bowl, just make sure to cover your bowl with a paper towel or something first. Enjoy!
