Lemon Jello Salad

Lemon Jello Salad is a simple side dish that goes great with any meal.  Loved by kids and adults alike, it’s creamy, smooth and packed with bananas and pineapple! Num!

Are you a lemon lover?  If so, this Lemon Jello Salad may be your new favorite side dish.

As with all things we love, we’ve been making this a lot lately.

Like all great recipes, once we all try a new creation and fall in love, we tend to binge on them for a few weeks.

That is until the next discovery comes around.

This Lemon Jello Salad is very easy, tastes great and is creamy.

I’ve made this a few times in a few different ways, but this combination is our favorite.

If you think it’s a bit much with the whipped cream, you can leave it off.

We all enjoyed it without the whipped cream layer, however we liked it more with the whipped cream layer.

It adds a creaminess to the jello that makes your lips smile with happiness.

And before someone leaves a comment in regards to you can’t mix pineapple and jello together as it wont set, I am here to tell you, you are wrong.

Wrong. Just Wrong. Ok, you might be right but not in the way you think.

You cannot mix Jello and FRESH pineapple.  You can mix Jello with canned pineapple.

The acidic levels in fresh pineapple will no let Jello set.  However this recipe calls for canned and you wont have any issues with canned pineapple!

For those of you who have NO IDEA what I’m talking about, there was a “study” done on why Jello wont set when combined with Pineapple.

It was something to the effect of Jello wont set because of a reaction to the pineapple.  if you google it, you’ll find the study pretty quickly.

I however, have made this Lemon Jello Salad with canned Pineapple and Bananas MANY times and it has set perfectly every time.

This Lemon Jello Salad is sweet yet subtle.  It’s a fantastic side dish or a tasty dessert.

It’s a guilt free {or less guilty,} late night snack that wont add ten pounds of water weight to your body while you sleep.

This Lemon Jello Salad works great for an every day family meal, Sunday dinner, Thanksgiving, Christmas or even Easter dish.

Plus, generally speaking, most people like Jello.  Kids and adults alike so you don’t have to worry too much about picky eaters when this dish is served.

So, are you a lemon fan?  If so, I suggest you whip this up to go with dinner tonight.

 

Yield: 8 Servings

Lemon Jello Salad

Cook Time 10 minutes
Inactive Time 5 hours
Total Time 5 hours 10 minutes

Ingredients

  • 1 (6 ounce) package lemon Jello
  • 2 cups boiling water
  • 2 cups cold water
  • 1 (20 ounce) can crushed pineapple, drained
  • 3 bananas, sliced
  • 1 (10 ounce) package mini marshmallows
  • 1/2 cup heavy whipping cream
  • 1/2 teaspoon vanilla
  • 1 Tablespoon powdered sugar

Instructions

In a large bowl, dissolve jello in hot water.
Add cold water and stir well.
Pour contents into desired serving bowl and refrigerate until thick but soupy. Stir mixture every 10-15 minutes, until mixture is a thicker soupy mixture - not chunky.
Add drained pineapple to jello, mix.
Add bananas to jello, mix.
Top with marshmallows. Cover with plastic wrap and chill for 4 hours or until set.
Just prior to serving, blend heavy whipping cream, vanilla and sugar. until soft peaks form.
Spread whipped cream on top of Jello and serve.
Refrigerate leftovers for up to 2 days in a covered container.

I make jello fluff....using hot water and cold water ...first add jello to hot water and then box of vanilla (instant) pudding...1 c hot then 1 c cold with ice... once that is mixed I add a container of cool whip or one with less sugar... all ingredients are sugar free... let it set then serve...a hit for potlucks, funeral dinners, at home.

I am doing lemon today as it is our son's favorite...tastes yummy from the wooden spoon...lol

may add some small oranges to it... will have lemon pound cake as well..

My daughter made this for our family on Easter and it was easy and fun to make. Right now we have more family in town so we are making it again. It is also full of fruit and it tastes really good.

I'm wondering why you can't add the pineapple and bananas immediately after dissolving the jello instead of refrigerating to let it begin to set. I've learned and always added the fruit immediately with good results. Thank you for your response.

Hi Bev! Great Question. You certainly can add it right away. However because the jello isn't set, the fruit will sink straight to the bottom. If you wait a little for the jello to start to set, it will float either throughout the jello or towards the top. I hope that helps!

Jello will not set if you use FRESH pineapple because there are enzymes that eat the protein in the gelatin. CANNED pineapple works because when you process pineapple, you cook it. This inactivates the enzymes, which is why the Jello will set.
