Watermelon Mozzarella & Balsamic Bites

 

I feel like I should put a disclaimer on this, if for no one else, then for my Father-in-Law who missed the announcement of what this was.

Upon first looking, he assumed this was an interesting combination of watermelon, marshmallow & chocolate sauce.  He being a lover of all things sweet, nabbed one, slathered it up in “chocolate sauce” and popped it in his mouth.  What he expect, and what he tasted were two different things.

For the record, this is watermelon mozzarella bites drizzled with a balsamic reduction.

And though not chocolate sauce and marshmallows, it’s quite delicious! 

Balsamic vinegar reduction is a favorite of mine when it comes to appetizers.  Just check out these Strawberry Spinach Bruschetta or these Caprese Bites with Balsamic Reduction.  Both include a balsamic reduction and both are phenomenal and easy make ahead appetizers perfect for any party.

This watermelon mozzarella appetizer includes a light, refreshing, perfectly sweetened watermelon topped with a mild mozzarella ball make a very tasty combination.  Add a power punch of balsamic vinegar and you have a very simple, make ahead appetizer for your next Barbecue or party. 

 

Watermelon, Mozzarella & Balsamic Bites

Watermelon Mozzarella & Balsamic Bites

Ingredients

  • 1/2 cup balsamic vinegar
  • watermelon cut into 1/2 inch cubes
  • mozzarella balls

Instructions

In a small saucepan, add balsamic vinegar. Cook on medium low heat until vinegar thickens and is half the amount. {if not using right away, set aside until ready to use}
Drizzle vinegar on platter.
Using a toothpick, skewer a mozzarella ball then a watermelon. Place on platter with balsamic vinegar.
Serve immediately.
