Pulled Pork Nachos

Pulled Pork Nachos are a must have meal for any nacho lover in your house.

These are your traditional nachos. 

There is no nacho cheese dipping sauce, ground beef or even chicken. 

These don’t taste “Mexican” from taco seasoning and in general aren’t something you’ll find at a fast food restaurant.

Instead, they are better.

I’ve included my favorite flavor combination in these nachos. 

Homemade Sweet Pulled Pork – though really you can use leftover pulled pork or store bought pork. 

Any flavor of pork will do, however my all time favorite is my Cafe Rio Style Sweet Pork recipe.

I’ve also added in black beans, cheese, tomatoes (which I usually don’t like but enjoy in this dish) and top it all off with my all time favorite, can’t live without it, goes perfect on everything, Cilantro Lime Dressing.

If you’ve not tried this yet, you are missing out. 

My favorite thing to is to eat it by itself with tortilla chips, so it only makes sense to drizzle (or drown) your nachos in it.

I promise you wont regret it.

It is also really really good and perfect for any sweet potato lover!

I am the type of person who makes a double batch of my sweet pork just so I can use it in a variety of recipes.

Plus, it freezes really well. 

After it’s made put it in a tupperware container and freeze it.  When ready, cook it up on the stove or in the microwave and use it in your favorite way – like these Pulled Pork Nachos!

They are easy, perfect for lunch or dinner and great for a fresh at the office kind of meal that will make your co-workers jealous!

Ingredients

Instructions

  1. Lay tortilla chips on a plate in a shallow layer. Do not pile them up high or you'll get a lot of empty chips!
  2. Cover chips with cheese, pulled pork, black beans & tomatoes.
  3. Drizzle with a generous amount of cilantro lime dressing.
  4. Add guacamole & sour cream if desired.
  5. Devour immediately!

Notes

You can make fresh pulled pork, use leftover pulled pork or buy pre-made pulled pork from the store. This tastes delicious in any form!
