What Is Chicken Lo Mein?

Chicken Lo Mein is an absolutely delicious Chinese dish!

It’s a staple in Chinese restaurants worldwide so there’s a good chance you’ve seen it if you haven’t tried it.

It uses traditional lo mein noodles which are similar to spaghetti noodles. Though you could also use linguine too.

The noodles are stir-fried with chicken breasts or thighs, veggies, and a savory sauce.

It’s known for its salty flavors and yummy noodles!

What Ingredients Are in One Pot Chicken Lo Mein?

This easy recipe is one of my favorite one-pot meals! You can’t go wrong with Chinese noodles right?

You could pick up the ingredients most grocery stores.

  • Chicken Breasts or Thighs: Cut into tender, juicy bites.
  • Linguine or Spaghetti Noodles: Substitute for traditional lo mein and totally soaks up all the sauce goodness.
  • Carrots & Red Bell Pepper: Color, crunch, and healthy too!
  • Green Onions & Garlic: We would be nowhere without them! Seriously! Sooo yummy!
  • Low Sodium Soy Sauce & A Hint of Sugar: Balance all the salty flavor with a touch of sweetness.
  • Corn Starch: To thicken the sauce.
  • Chicken Broth: Adds more flavor than just hot water.
  • Extra Virgin Olive Oil: For sautéing and bringing everything together.

Pro Tips:

  • Freshly chopped garlic is a must!
  • For more traditional flavor go with sesame oil instead of olive oil.
  • Don’t be afraid to experiment with additions like hoisin sauce or red pepper flakes for a spicy kick!

How to Store One Pot Chicken Lo Mein?

Let any leftover lo mein cool to room temperature first.

Then store in an airtight container in the fridge.

It’s perfect for meal prep and tastes so good the next day for lunch!

How Long Does One Pot Chicken Lo Mein Last in the Fridge?

Kept in an airtight container, this easy chicken mein recipe should stay fresh for about 3-4 days.

Be sure not to leave it sitting out for a long time before you transfer, because that can make it go bad sooner.

Also, foods that don’t have a lid will absorb other flavors from the fridge and dry out more quickly.

So always keep that lid on tight.

You sure can make this Chinese chicken lo mein ahead of time!

It’s a great option for meal prep because you can cook up a big batch on Sunday and have lunches for the week!
