Mexican Stuffed Chicken

This easy-to-make Mexican Stuffed Chicken is a world of flavor! It’s the perfect blend of cheesy goodness and crunchy delight!

Prep Time 20 minutes
Cook Time 40 minutes
Total Time 1 hour

Instructions

  1. Preheat oven to 350*F
  2. Coat a 9x9 inch casserole dish with cooking spray and set aside.
  3. Cut each chicken breast in half width wise (you're butterfly cutting the chicken) but don't cut all the way through, you just want to open it up so it's easier to pound.
  4. Place chicken breast between two pieces of plastic wrap. Pound with a meat tenderizer until flattened to 1/4 inch thick. Do this to all breasts.
  5. In a bowl mix 3 Tablespoons butter, pepper jack cheese, sharp cheddar cheese, green onions & green chilies.
  6. In another bowl place melted butter.
  7. In another bowl mix crushed cheese crackers and taco seasoning.
  8. Spoon cheese mixture onto each chicken breast and roll up, tucking sides in if possible. No need to secure with toothpicks.
  9. Dip rolled chicken into butter mixture then coat with cracker crumbs.
  10. Place chicken into casserole dish.
  11. Bake for 30 - 40 minutes or until digital thermostat inserted into chicken reads 165*F
